Notes: 1. Set aside 2 -3 quarts apple juice and pitch yeast
2. Add the remainder of ingredients to fermenter.
3. Add crushed Campden tablet and rest for 12 hrs.
4. Add Pectic Enzyme and rest for 12 hrs.
5. Test PH and adjust to 3.5 using Malic/Citric Acid
6. Pitch yeast starter.
7. Set spunding valve at 10 psi
8. Ferment @ 67 F for 14 days or until FG is reached. Drop dry-hop bag at 4 days from end of ferment.
9. Add Biofine Clear and cold crash for 24hrs.
10. To a new Keg and Potassium Sorbate (Sorbistat K) and Potassium Metabisulphite to stop fermentation. Closed transfer Cider to new keg.
12. Force carbonate @ 30 psi and shake to 2 mins.
13. Set serving keg pressure to 16 psi @ 32 F
14. Pour! |

Notes: Anvil Foundry brewing system. Almost full capacity with this amount of grains.
All grains and pumpkin go in the mash.
Getting the wort to drain from the grains and sparge is a bitch.
Scooped out grains and put in screen and pressed. Added a little sparge water and pressed again.
Forget about a clear wort draining through the grains. Ain't gonna happen even with 1 lb of rice hulls.
Libby's canned pumpkin. Coated with honey. Baked for 45 mins at 350. Let it cool to 154 and add to mash with 20 minutes left in mash.
For the vanilla bean vodka solution, Veil Vanilla Flavored Vodka.

I HAVE 2 ROW LEFT OVER AND GOT A GREAT DEAL ON GALAXY HOPS FROM YAKAMA VALLEY. I WOULD LIKE TO USE AS MUCH AS I CAN. HAVENT BREWED IN OVER A YEAR SO HOPEFULLY BREW DAY WILL GO WELL. I AM GOING TO CRUSH THE GRAINS AS HOME. THE ONLY THING I NEED TO BUY FOR THIS BATCH IS YEAST AND C02!
NEED TO VACCUME SEAL LEFT OVER GALAXY HOPS. - DONE
10-14-22: brew day
BREW DAY STARTED OFF BAD. THE RECIRC PUMP WENT BAD AND I HAD TO GO OLD SCHOOL THE WHOLE DAY. USED BUCKETS AND THE WORK BENCH AS THE 3-TIER SYSTEM. HAD TO SPARGE WITH PITCHERS. AFTER THAT EVERYTHING WENT FINE. (SPARGE TIME 60 MIN)
MASH WATER @ 3.2 GAL WAS NOT ENOUGH. THE MASH WAS THICK SO I HEATED UP 2 MOR GAL TO ADD FOR A TOTAL OF 5 GAL. AFTER ADDING THE 2 GAL @ 170F AND RUNNING THE MASH THE SPARGE TEM PSTARTED @ 160F AND ENDED AT 148 SO IT COULD HAVE BEEN THE CORRECT TEMP BUT UNEVEN THROUGH THE MASH TUN. IT APPEARED TO BE GOOD JUDGING BY THE OG READING AT THE END.

OVER ALL NOT A BAD BRE DAY BUT WOULD HAVE BEEN FASTER WITH RECIRC PUMP.

10/28/22 KEGGED THE BEER FO RTHE HALOWEEN PARTY. THE FG WAS AT 1.012. IT WAS .007 LOWER THAT EXPECTED WHILE ADJUSTING FOR THE LOWER OG. AFTER RESERCH, IT WAS DETERMINED THAT THE MASH TEMP MIGHT HAVE BEEN A LITTLE LOW. IT DOES NOT APPEAR TO AFFECT THE BEER OTHER THAN A SLIGHTLY DIFFERENT MOUTHFEEL.
THE BEER TASTES GREAT FOR OA SMASH BEER. THE GALAXY HOPS ARE STILL MY FAVORITE.

Notes: Goal is to have 7 gallons 1.072 SG wort at start of boil.
Add Dry Malt Extract (DME) if SG is low, or may want to wiat until the beer is in the fermenter. If you wait to add DME, be sure to add it after fermentation begins to calm down.
If water is soft, hold off on adding roasted grains and British Crystal Malts until 15min of mash
Added 16oz of Lactose Sugar, needs to be whirlpooled. Can be done 15 min prior to flame out. Will need to be whirlpooled with no rumbling boil. OR we can do it at flame out. See page 55 bottom of 2nd paragraph. I prefer to try the first option.
Vanilla beans to be cut into 1 inch segments and soak in Angel's Envy Bourbon until ready to add to secondary. |
