##MASH
- WAIT to add crystal malts until 5 minutes left in the mash. Target mash pH is 5.3.
- **Start with *empty* MLT**
- Fill HLT with 8 or more gallons of strike water and heat to strike temp of 170 degrees (F)
- Transfer 5 2/3 gallons of strike water to MLT, then **CLOSE MASH TUN VALVE** (to ensure no mash water goes back to HLT)
- **Turn off power to HLT** (until sparge water is added)
- Add mash salts, then dough-in and stir
- Add a drop or two of lactic acid to sparge water
- After stirring, add remaining sparge water to HLT (*temporarily reserving 1 gallon in case needed to cool down mash*) and set temp to 153 degrees.
- Begin recirc when HLT is at temp
- Add crystal malts when there are 5 minutes left in the mash
##BOIL
- No kettle salts
- nE=4, T1=75, T2=60, T3=25, T4=10
- When there are 25 minutes left in the boil sanitize Tilt hydrometer and rehydrate the Irish moss with just enough RO water to cover it)
##FERMENTATION
- Sprinkle dry yeast directly onto cooled wort (no need to oxygenate when using dry yeast)
- Cool wort to 67F
- Put sanitized Tilt hydrometer into fermenter
- Open ferment (cover loosely with sanitized foil) initially, add airlock just after high Kreusen

- After final gravity is reached, do a CLOSED transfer of beer to oxygen purged keg

Notes: Mill the grains and mash at 152°F (67°C) for 90 minutes. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate.
Boil for 60 minutes, adding hops according to the schedule. After the boil, chill the wort to about 68°F (20°C), aerate, and pitch the yeast. Ferment at 68°F (20°C) for 7 days, then allow the temperature to rise to room temperature and hold for an additional 7 more days.
Crash to 35°F (2°C), then package and carbonate to about 2.25 volumes of CO2.
BREWER’S NOTES
Let the relatively long mash and warmish (for lager yeast) fermentation temperature do their thing here. The result should be a well-attenuated, brightly hoppy pale ale with a nice cracker-and-nut malt backbone. Also—and I know this is a big ask—avoid the temptation to dry hop this beer. You’ll get plenty of hop flavor and aroma from the late additions, while dry hopping can make it overly resinous and mask the fruity-floral flavors from the hop oils. Last, play around with some foreign-grown Cascade hops—if you can source them—to see how different they all are, even when derived from the same species. |

5 Madagascar vanilla beans, split, scraped, and diced
3 large dried ancho chilies, split open, seeds removed, torn apart, included 1 tsp of reserved seeds
6 oz - Organic Raw Cacao Nibs, baked at 250 for 20 minutes (or until fragrant), allow to cool
All ingredients were added to tincture with vodka and stored at room temp for roughly 6 weeks, shaken occasionally.

Packaging:
A Keg, fitted with filter around dip tube, was dosed with tincture, solid ingredients were placed in fine mesh bag and thrown in keg. Finished stout was racked via fermentor spigot to keg through liquid out post; keg was then purged and allowed to age at room temp roughly 7 days. Beer was then racked to a serving keg via jumper between liquid posts; keg was purged and hooked up to gas in the kegerator ~10 psi for 7 further days.
Tasting 12/28/22
Appearance: Deep reddish brown, black from face on, the stout is pale on the edges. A thin ring of tight khaki foam hangs around for the whole experience; clinging to the glass as go
Aroma: Initial smoked pepper flavor, vanilla root beer float, earthy bittersweet chocolate, malt ball, I don't get vanilla face on but suspect it's supporting the other characters
Flavor: wow, an attack! Gentle smoke combines with roast on the front, gentle sweetness carries through with cocoa and vanilla on the swallow. Wow, finish is griping with gentle heat and vanilla cola. Very tasty.
Mouthfeel: medium minus; a memorable and quick experience on the palate
Overall: I'm really proud of this one! This is by far my most successful use of adjuncts, and most of them are in line with where I wanted them. I think this recipe would really shine with cinnamon, and I want to rebrew this just to include it. I think we could almost use more vanilla and I could stand more heat from the chilies actually. |

Notes: - The thermometer switch is 1.8oC high at ~70oC
- Mash tun drops about 3 oC from starting temp over an hour
- Pre-heated mash tun with warm water
- Heated kettle to 74oC (75.8oC on thermometer switch)
- Dropped to 66.9oC after adding grain: -9oC (in kitchen)
- Had to add a kettle of boiling water (2l) - have included this up above. Was aiming for 15l mash but ended with 17l. Prob had 10mins extra at the lower initial start temp prior to starting the clock on the 60 mins
- Actual mash start temp 67.4oC true
- had to add 11l of hot water instead of 7l. Possibly due to not being boiling and possibly due to using Pyrex jug.
