From source, intended for full batch:
A day or two before brew day make a yeast starter if using a liquid strain. On brew day perform a single infusion mash. Mash in at 152 °F (67 °C) in 4.4 gallons (16.6 L) of water. Hold this temperature for 60 minutes. Sparge with 180 °F (82 °C) water to collect 7 gallons (26.5 L) of wort. Boil for 60 minutes, adding hops at times indicated. The goal is to get 5.5 gallons (21 L) into your fermenter. Chill the wort to 64 °F (18 °C). Ferment between 64–68 °F (18–20 °C). Transfer to a secondary vessel after primary fermentation is complete. Dry hop for one week with 0.5 oz. (14 g) Amarillo®, 0.5 oz. (14 g) Simcoe®, and 0.5 oz. (14 g) Centennial hops. After one week dry hop again with 0.5 oz. (14 g) Simcoe® and 0.5 oz. (14 g) Cascade hops. Prime to 2.3 volumes of CO2.
My comments:
1. We won’t need a starter because it’s a half batch.
2. We’ll do our best to chill it and keep the fermentation temp as low as possible, but we only have water baths, ice, and basement spaces for cooling and this summer has been crazy hot. So we’ll just see how it goes.
3. Our local store didn't have Optic, so substituting Golden Promise. Research: https://www.reddit.com/r/Homebrewing/comments/30haxx/optic_malt_replacement/
4. I added some acidulated malt to optimize the estimated mash ph
NOTE: we ware planning on brewing this with Soren's setup at his house. He says his system only boils off a half a gallon in an hour so I adjusted the pre-boil volume.

400ml cold brew coffee added to primary along with 150g of cacao nibs soaked in approximately 150ml of congac. This addition was made on day 8 after soaking the cacao nibs for 3-4 days and brewing the cold brew for 24 hours.
Lactose can be added to end of boil to round off bitterness/add sweetness. My thought is that the lactose sweetness and higher FG will counteract the bitterness from the roasted/dark malts and the coffee/caco - can remove lactose if switching to a lower attenuation yeast. |

1st Brew - Not super bitter, but good hop flavor, very light up front with a hoppy/bitter finish light citrus tones throughout. Next time would remove Simcoe from dry hop, and increase the amount of sweet and lemon peel during secondary.
