Notes: Extra Ingredients:
4 oz. corn sugar added to boil
Approx. 1 liter of fresh-squeezed backyard navel orange juice (14 Brix) added to primary fermenter only after 2 weeks of fermentation. The OJ was pasteurized at 170 F for 20 minutes before adding to fermenter.
"Dry-zested" the beer in secondary for 10 days, using the zest from one lemon, one lime and one grapefruit.
Yeast:
Wyeast 3711 French Saison, two-liter starter
Special Instructions / Notes:
Fermented cool (62 F) ambient for first 3 days, then moved the fermenter indoors and placed on a heat mat for remaining duration |

Mashed at 153F
2L Starter for 34 hours with 1 cup DME
Put starter in fridge then decanted off most wort, not sure if decanted too much and dumped some yeast accidentally.
Forgot 1lb Flaked Wheat in recipe, head retention will suffer. will ferment at 65F for 2 weeks.
8/2/15- dry hopped with 2oz Columbus and added oak chips that had been soaking in vodka for 2 weeks SG was 1.011 which leaves 7.7% ABV. Will leave on chips and hops for 6 days then keg. This will be my first kegged beer |

If I rebrew this I would definitely take out the Simcoe FWH. Not sure why I put that in there in the first place. It makes it just a tad too bitter. |

Notes: Double crush the roast barley to extract the most colour and flavour from it possible.
Keep 500ml of wort and sour uncovered at room temperature for a few days. Use a sour culture if you have one available, but not necessary. After a few days, re-boil the sour wort, cool then add directly to fermenter. |

Notes: Using frozen mango, let thaw completely before racking beer onto it.
The mango didn't really do anything helpful, so next time I'd probably make a mango syrup (blend mango into a liquid, add sugar and a little water, boil until thick, strain, add to secondary) to try to get more 'mango' flavor out of it. |

Notes: This is the best homebrew I've made to date!
I made the following changes from the recipe found at: https://beerandbrewing.com/breakside-brewery-ipa-recipe/
-Increased 2-row from 8.75lb. to 10 lb.
-Increased "Light Crystal" from 1.125 lb. to 1.5 lb and used Caramel Malt 10L.
-Increased Light Munich from 12 oz. to 1 lb.
-Used 18g Cascade (6%AA) instead of Centennial at 10 min.
-Used Cascade instead of Chinook at whirlpool
-Used Cascade instead of Chinook at end of fermantation/dry hop. (I have 5 lbs of Cascade I need to use up!)
-Used 20g of SafeAle US-05 instead of WLP001.
-Finally, I made water adjustments listed under "Other Ingredients" based on my local water profile in order to reach the targets shown.
DIRECTIONS:
Add brewing tablets/salts/acids as needed to water and mix well until fully dissolved. Add grains. Mash at 153°F (67.2°C) for 30 minutes targeting a pH of 5.3, then mash out to 165°F (74°C). Add corn sugar at beginning of boil. Boil for 60 mins adding hops as specified. Add yeast nutrient with around 15-10 mins to ago. After flameout, add whirlpool hops when temp gets down to 170°F. Whirlpool for 20-30 mins. Cool wort to 66°F (19°C). Ferment at 68°F (20°C). Dry hop with the 50/50 mix of Citra and Cascade at the end of fermentation. Transfer off of the hops and yeast at day 11.
BREAKSIDE BREWER’S NOTES:
We target an 8:1 sulfate-to-chloride ratio for our hoppy beers. Use a moderate amount of gypsum, calcium chloride, and Epsom salts to Burtonize your water. You might try 4 g gypsum, 0.5–0.65 g calcium chloride, and 0.25 g Epsom salt as a starting point. |
