Notes: Mixed canned pumpkin with 8 oz honey and baked at 350 for 60 minutes. Let cool, placed in nylon grain bag and boiled for 60 minutes.
Sliced Vanilla Beans lengthwise and scraped out seeds and everything inside into jar, covered beans with vodka. Chopped bean into 1/4 inch pieces and added to solution as well. Marinated for 2 weeks and then added to secondary.
Add .5 tsp of Capella's Graham Cracker Extract to secondary. Add the other .5 tsp to bottling bucket. |

My tweaks will be to replace the White Labs WLP028 with Imperial Yeast A31Tartan, adjusted the grain bill to use grains I have on hand (subbed GP for MO.) I'll aldd the roasted/dark grains late in the mash to reduce astringency. Will ferment using STC-1000+ SCOTTISH ALE PROFILE (Pr3)(19+ days)

Notes: 5 yeast packs in 1.5gal starter which was decanted after 4 days into fermenter.
Added one 4" section of bourbon or oak infused oak spiral plus soaking alcohol to each keg. Aging time TBD (Approx 6 weeks). Rum keg will include 2oz molasses and one star anise flower.
Racked 11.5 gal to fermenter. Cold break loss about 1 quart.
At 5 months, this is a very close (and delicious) approximation of KBS |
