Notes: A light and easy drinking lager inspired by the small Arkansas village where I was reared. A settlement of German, Swiss, and Polish coal mining immigrants Altus had a population of 418 back in the '80s. Being on the edge of a wet county, next to a dry county and home to 4 wineries and multiple other places to purchase alcoholic beverages. We loved our wine in Altus, but when taking a break from the grape, we chugged a light lager. The use of Talus hops has simply to do with the name; if you transpose the first two letters and you'll know.
Brewer's Notes:
*the mix of 2-row base malts is what I had on hand; will likely just use 6 lbs. of one type/brand in future brews
*If not using the WLP830 German Lager yeast, I will likely use Imperial G03 Dieter (Koln) Ale yeast fermented on the cool side of the recommended range and lagered |

Notes: When fermentation is close to complete, rack beer to a secondary on top of the blackberry purée.
To prepare the fruit, rinse thoroughly, pulse in blender for a couple moments and then gently boil the fresh blackberries for about 1-2 mins or so to break down the fruit and kill the critters.
1.25 liter starter will provide about 244 billion cells. (based on 64% viability)
This beer turned out to be fantastic! Very clean and refreshing with lot's of blackberry flavor. |

Notes: I've been making a beer derived from the old Ballantine IPA for years. It's not a clone but it tries to capture some of those old flavors. I prefer Brewer's Gold hops to the Bullion but they are related and both will work. The recipe below is one of many versions, it was the easiest one to find. The former brewmaster at the old Narragansett Brewery sampled this beer about 15 years ago and gave it a thumbs up so I knew I was on the right track. I get a 1.072/1.073 OG with this beer.
