Notes: Mash at 153 for 60 mins. Boil for 60 mins.
Create a vortex and cool to 205f. Steep hops for 20 mins at this temp.
Chill to 58 and pitch yeast. Ferment at 58 until gravity is 1028, then raise temp to 65.
Add dry hops on Day 7, raise temp to 68 for at least 3 days. Then crash to 23 and carbonate in keg to 2.6 vols co2.
For water, chloride:sulfate should be 1.2 : 1.3. Mash ph 5.2 or 5.3.
OG 1054, FG 1010. 6.5% ABV. IBU 35 |

Notes: Make a chocolate syrup. This is an extra step that will make it easier to mix the chocolate into the brew. To make the syrup, bring 2 to 3 cups of water to a boil in a medium saucepan. Dissolve the brown sugar and cocoa powder, mixing thoroughly. Lower to medium low heat and cook 5-10 minutes. Stir this constantly to avoid scorching the chocolate. Add this 10 minutes before flameout.
Vanilla beans should be sliced open lengthwise and scraped out into the secondary fermenter, and then tossed in. |

Notes: Full volume brew in a bag
mash at 2.95 quarts /lb
Assume boil off at 1.25 gallons/hour
Mill grains
Fill kettle to 7.56 gallons
Add salts/acid
Put bag in kettle
Check grain temp should be about 72
Heat water to 158 , boil some extra water on stove
Add grains slowly, gently stir thoughout
Take temperature after grains added, goal is 150,
Adjust with extra boiling water/ice as needed
Mash for 60-90 minutes
Pull bag, squeeze bag into kettle, set aside ( no rinse needed)
Record volune
Take refractometer reading
Adjust hops/boil time as needed,
Boil and add hops per schedule,
Sanitize fermenter and chiller
Hook chiller up,
Cool to 90-100degrees
Take refractometer and hydrometer reading
Pitch yeast
Close fermenter and check in 4 days, most likely can bottle a week later

Notes: FAT YAK-clone. Endret fra Nelson Sauvin til Hallertau blanc (humler som ligner veldig), og redusert koketiden en del. Blir noe mindre bitter ettersom Nelson sauvin som står i oppskrift har syrenivå på 12.3 og min Hallertau B ligger på 8.3, syrenivå på Cascaden min var noe høyere så det utjevnet seg en del. Vannet der vi bor er glimrende og behøves ikke gjøres noe med :-)
Byttet også 0.2 crystal malt med 0.4 biscuit. All malt som jeg har brukt er Viking malt, men det er ikke mulig å velge.
Dette er første brygg på egen maltmølle, så er litt spent på utbytte. |
