Steep grains in a bag at 155 degrees for 30 minutes. Sparge with 1/2 gallon 170 degree water. Allow grains to drip into pot, but don't squeeze. Discard grains. Bring to a boil and add:

I didnt quite like this one at first (week 2-3), finding it a bit too roasty bitter, but it matured beautifully. The roasty bitterness smoothed out, and it is becoming a beautiful beer(week 5).
Day 100, this beer is absolutely lovely. So silky and easy to drink. It definitely benefits from low carbonation levels.

Pitching Rate ~ 230B cells (make a 1L, 1.036 starter with honey and nutrients, decant as much as possible).
Aerate with one good Purge & Shake.
Make 3 gallons of mead, then add cherries (in a bag).

Use an SNA (stir/whip after each addition)
(Mix the nutrient blend into ½ cup of must and add it back to the fermenter to avoid an explosive release of CO2.)

Add ¾ tsp 48 hours after ferm begins.
Add ¾ tsp after 30% of the sugar has been depleted.
Ferment at or below 70F.

Notes: The corn sugar in the recipe is an approximation for the sugar in the apple juice, not an actual ingredient. I used 5 gallons of apple juice and 1/2 gallon of water as a base.
I boiled 1 gallon of apple juice with the spices (about 10 shakes of each out of the shaker), the whole bottle of pumpkin pie spice extract (I think it was a 1oz bottle), and the 4 lbs of light brown sugar.
I peeled and roasted the butternut squash and let it roast at 375 for about an hour, checking in on it frequently until it tasted good and was tender. Then I turned on the broiler for 5 minutes to give it a good roast/ browning for some extra flavor. I accidentally burned some, so I peeled off the black bits. If I were to do it again, I would peel the squash better. It has really thick skin that doesnt peel easily and a potato peeler doesnt quite get all of it. I would give it another go around or use a thick knife.
I put the squash in the fermenter and poured the boiling cider over it. I then added the rest of the apple juice straight from the bottle. I topped it off with about a half gallon of water from the tap and added back in my yeast starter.
I had some really old yeast that took a few days to wake up in my starter. I should have poured off the starter liquid but instead I added it all to the fermenter. |

Notes: Mash all grains except chocolate wheat malt at 149° F (65° C) for 90 minutes. Powder chocolate wheat malt in a clean coffee grinder and sprinkle the powder over the top of the mash, then fly sparge as normal.
Chill wort to 70° F (21° C), pitch yeast, and monitor for activity. As soon as fermentation begins, chill to 64° F (18° C) and make sure you’ve attached a blowoff hose.
White Labs WLP007 Dry English ale yeast (optional, to increase
attenuation) (add at high krausen.
After fermentation is complete, rack to secondary and age four months to a year.

Recipe adjustments: More bittering. VERY late addition hops. Ease off on the Amarillo tiger.
I want to make a super clear but pungent IPA of the style we enjoy in San Diego. Simple malt bill, clean bittering, and all late addition hops of Centennial for flavor, and Amarillo for the nose.
Steps:

- Wait 2 more weeks
- Transfer to secondary & dry hop.
- Wait 3 days
- Dry hop again
- Wait 3 days
- Keg & add gelatin.
- Carb up the keg

- Well, here goes again. This time I did 13lb 2-row, 1lb Carapils, 1lb C10.
- Got some belgian 550 to mix it up and do a belgian ipa.
- Going to ferment at 66º then raise it to 68º after the first couple weeks.
- Going to wait 3 full weeks before transfering to secondary and dry hopping.
- Using all fresh hops from the store (not from my freezer) and not going to freeze them. Just putting them in the fridge.
- Also trying first wart hopping.
- Also bumped the boil from 60 to 90.
- OG: 1.065 (hydro reading. Dead on)
- Blunder: I did mix up my final hops. So I added 1oz Cent and 1oz Amarillo at the 5min mark, then 1 oz Amarillo at the 0 min mark. |
