Tasting Notes: Juicy! hazy AF! Tropical aromas of ripe apricots, orange, and pineapple. Pithy, danky, nice spark of bitterness. Will brew this again as it's going fast! |

Speedy Home brewing from Feb 28 2014.
Still learning to brew I have been using these version to play with different Hops and slight changes to learn techniques and taste the differences with little variations by keeping it simple.
This is a 1 gallon recipe, I am using a 10 quart stockpot, and a 1 gallon carboy.
Warm up the water to about 150 degrees then add the 1 pound DME - Light. Once boil starts this is the 15 minute mark and add 12 grams of Hops,
At 10 minutes add Fermax and Whirlfloc
At Flame-out add 17 Grams of Hops
Chill in Ice bath
Strain and put in Carboy, I go back and fourth a couple of times to bring air back into wort
Add / Sprinkle 2 grams of SF-05 Wait 30 minutes. Cover with Tinfoil
Aerate / Shake the bottle for 3-5 minutes
Once Fermentation finish's about 5 days add 1 ounce of hops |

wlp 300 was unavailable and purveyor substituted wlp 380
we decided to underpitch the 380 and ferment on the warmer side in order to increase the isoamyl acetate esters per the experience below:

Bought this cause my local store was out of WLP300 strain. But as I wanted the 300's banana flavour I used one vial for 40 liters. No starter, no aeration, 25 °C...BOOOOM banana all over the place. In my mind even more than you get with WLP300. On the other hand attenuation went down but that's a price I'm willing to pay. Aroma is less fruity and more spicy. Besides banana there's also hinds of clove and citrus in the flavour (might be the Saphir hops though) plus a very nice acidity.

Notes: Banana Milkshake is a... you guessed it, banana-flavored milkshake IPA. The banana flavor mostly comes from a special yeast that is a derivative strain of its parental Hefeweizen yeast. The major difference being that this yeast, Omega "Bananza" doesn't create clove and pepper-like esters. It also imparts a light pair flavor. The hops complement the flavor profile of the yeast with the aromas and flavors of banana, pear, orange, and fruity spice. Creaminess and residual unfermentable sugars come from the lactose. The grain bill offers notes of bread, cracker, and honey.
For prime banana esters, pitch yeast at 68°F (20°C) and let it free rise to 74°F (21-23°C.) |

Notes: So the idea is that the Vienna malt will give the beer an orange colour; the Victory malt will add a toast flavour; the Cascade will give a citrusy aroma; and of course steeping the orange peel will hopefully add the orange flavour.

Notes: Note the malt is NZ Gladfield Lager malt, not UK.
Actual OG: 1045; final 1008 and primed with 5g maltodextrin/500ml bottle so actual ABV close to 5%. Fermentation lasted 4 days. Went over 17C a bit but no more than 20C.
Result: Not bad. A bit unbalanced (too hoppy) for such a light body but the flavour of the (superb local) malt still manages to come through. Did bottle 2 x 500ml before the dry hop and thought it tasted better than the main batch. |
