For yeast, use full package of safale S05, or half in a .5L starter made 1 day prior. This half packet has worked very well previously for a lager.
Distilled water for sparge
London Ont filtered water for mash.
Mash PH came in at 6.0. Added .5 ml lactic but made no difference. Suspect high RA in London water.
73C strike water with 20C grain temp hit target of 67C bang on.
Rehydrate tmp is low, 75F to 84F |

Notes: Actual yeast is Omega Labs Jovaru strain (see their website for the original recipe for this beer), but not in database yet. Lithuanian farmhouse yeast, so similar to a Norwegian Kveik. Recipe calls for Hallertau Blanc hops, but my LHBS didn’t have, so subbed in Nelson Sauvin.
Use Indian coriander, and crush lightly (not to a powder). Their recipe calls for dried sweet orange peel, but I’m using dried bitter orange peel from a tree in my yard. |

Notes: Use soft brewing water, acidified slightly if possible.
Mash grains for 60 minutes at 154°F (67°C). Follow boil schedule.
Ferment at 68°F (20°C), transfer, and condition in a secondary vessel for several days before bottling.
Bottle prime with the usual 0.75 cups (177 mL) dextrose, or corn sugar, per 5 gallon batch.
Chimay has a slightly higher level of carbonation than usual with the style of beer, so feel free to add a few extra teaspoons of priming sugar. It is also recommended to bottle in heavey-gauge, 750 mL bottles if possible (especially with the high level of carbonation). I Kegged and left for another month and it tasted great.
