| Notes: New England or Vermont style ale. This recipe is delicious! Little hop bitterness, as per style for "Vermont" or "New England" Ale, but tons of fruity and floral aromas. The GigaYeast Vermont IPA yeast give it wonderful complexity and depth. I'll be brewing this one over and over. |

Swapped out the Mosaic, Citra and Simcoe hops with NZ Nelson Sauvin and Rakau hops to try and emulate Garage Projects Sunrise Valley Hazy IPA.
First Wort Hops are added in a hop spider and pulled once it reaches a rolling boil to reduce the bitterness.
Increased Grain Bill to hit 8%

7.5% Flaked Oats
7.5% Flaked Wheat
5% Gladiator (Carapils) Malt
4% Acidulated Malt (to bring Ph down to 5.2)
Use Epsom Salt, Table salt, Chalk, calcium chloride and calcium sulfate additions to adjust water profile to about 175–200 ppm chloride, 75–100 ppm sulfate, and 125–150 ppm calcium.
Mash at 149°F (65°C) for 60 minutes or until conversion is complete.
Add half of the water salt additions to the mash and the rest at sparge.
Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Remove the FWH Hops once a rolling boil is hit.
Boil for 90 minutes.
Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.

Notes: To brew this Kentucky Breakfast Stout clone, perform an infusion mash at 155°F (68°C) for 60 minutes. Boil for 90 minutes, adding hops, chocolate and coffee as specified. Ferment for two weeks at 65°F (18°C). Soak 0.25 oz (7 g) toasted French oak chips in 1 cup (237 ml) Kentucky bourbon for two days. Soak ground Kona coffee in 1 cup (237 ml) boiled, cooled water and leave overnight, covered, in refrigerator. Strain out grounds and add cold-brewed coffee, bourbon and wood chips to sanitized secondary. Rack fermented stout onto this mixture and condition in secondary at 55–60°F (13–16°C) for 2 to 6 months.

Notes: ACTUAL RESULTS:
SG: 1.057
OG: 1.078

11/29/15: Mashed way lower than I would have hopped (target 155) and I didn't correct it (i know better now that I should have added boiling water.) After 60 minutes mash was at 145-148. Collected 7.1 gallons at 1.057 which is beyond bad.
Added the coffee grounds too early along with the chocolate at 15 minutes. Used a heaping spoonful of cocoa powder and 2.8oz of 85% chocolate. Added some molasses as well but probably not much to make a difference.
12/12/15: Racked to secondary on day 13 with .3oz of wood that had been soaking in a cup of bulliet bourbon.
12/22/15: Racked to keg on day 23.

12/31/15: Tasted 1 month in with mild carbonation. Obviously a little thinner than I was going for but still delicious (4/5 stars). The coffee shines through and the bourbon is noticeable. I sort of wish the hops were bigger - maybe chinook would have been a better choice or perhaps more nugget. Goes to show that you can screw up and still make delicious beer. RDWHAHB! |
