Notes: Intended to be in the family of home brews Katie Luther may have brewed for Martin in the early 1500's. The name comes from nun Katie's escape from the convent in a used herring barrel. This is the first iteration of the original recipe which seemed a bit too hoppy. I backed off the Hallertau by 1 oz.
Cooled with copper coil cooler and garden hose to 90 deg F. Added 2.9 gal room temp water, brought down to about 74 deg F. Aerated wort for 20 seconds with oxygen and metal stone. |

But a local brewery used champagne yeast to get the super dry finish and it was quite delicious. And did it as a pils/galaxy SMaSH.
I could see treating it as a BSG by adding some sugar, maybe 10% or so, try to hit 0P with champagne yeast, and dry hop the shit out of it.
Start with standard S-04, then pitch some dry champagne yeast after a week.
* Fermentis has a new yeast out: HA-18 which is a combination of high gravity ale yeast and glucoamylase. I'll use that first if I can find it.

Notes: Topped up the kettle prior to the 10-minute addition to achieve final volume.
Ferment in split batches. 4 gallons at 66F (room temp) range with ale yeast for a day. Once fermentation is going, rack off 3 QT and pitch SCOBY Kombucha strain.
After a week in Primary, rack off 3 QT of beer to ferment with Lacto culture.
Perform blending trials to determine appropriate volumes of Beer, Kombeercha, and Lactic to achieve the desired end-product.
Potentially throwing a dried Chipotle (seeds removed) into secondary a day before bottling. |
