Notes: Re-brew of January 2023 batch that placed 3rd in Indy NHC Regional. Increased the mash-in temp a few degrees from 144* to 146* and added a short decoction which was pulled towards the end of the 152* rest so it would be ready after the main mash was heated and rested at 158*. Added a pinch of Vienna and upped the IBU by about 5 IBU. Stopped immersion chiller after a few minutes for a 15 minute hop stand with 3 x 1oz muslin bags of Hersbrucker. Pitched one 200B cell pack of WLP850 and the decanted 1L sns slurry from one 200B cell pack. Planning to bottle on June 8th (Day 52) to ship for 6/14 arrival and 6/21 judging. The January batch was great around Day 55. Had some slight grape/thiol notes UNTIL about Day 70. Rec'd great feedback and 40+ scores from judges but a master-level judge recommended a touch more malt backbone. FWIW it was a really close Bitburger clone. Bitburger plus a skosh more should be perfect for NHC Finals. |

Notes: No Sparge Method used. After 10 minutes of the 162* rest, strained 2.0 gallon thick decoction mash into side kettle and brought to boil. Ensured main mash stayed at 162* after grain removal. simmered the decoction about 30 mins.
Entered into 2023 NHC-Indy 1st Round. Placed 2nd. Advanced to finals in San Diego. Beer was a skosh too hoppy (aromatically) with a full ounce at flameout , but bitterness was perfect. Decreased flameout hops in this batch so as not to mask the malt aroma.
Brewed 55 days before planned bottling on 6/8. Shipping deadline for NHC is 6/14 and judging is on 6/21

Scooped out 2 gallons thick mash into Kettle #2 after the 152 rest, then direct-fired main mash to 160* and conducted decoction in K2 while main mash rested at 160*. Notes: No Sparge Method used. 148* rest was unusually long (30 min extra) due to unexpected interruption. After 10 minutes of the 162* rest, strained thick decoction mash into side kettle and brought to boil. Ensured main mash stayed at 162* after grain removal. This is an Export-Strength Helles like Augustiner Edelstoff. Seems to fare better in competition than previous batches at lower abv versions. Delicious! Yeast was a 300ml fresh slurry from a dunkelsbock that was mixed WLP833 and S-189

Notes: Full volume mash. No sparge. Recirculated wort during mashout. Added BrewTan-B to mash water and just before flameout. Did an SNS yeast starter with one pack of WLP840 and two vials of frozen/banked WLP840. The banked WLP840 was tested in a small starter to confirm viability. Fermented in 48-52* garage.
Excellent beer. 1.25oz of Liberty hops was a bit too much for the style as a WP addition. The Sugar Creek malt addition also added some body/complexity which was nice but probably a better fit in a pre-pro pils. |

Full-volume, no sparge mash with 15 mins recirculation during mashout to set the grain bed.
Almost spot-on clone to Ayinger Celebrator. Possibly a little more rich. Perfect in the 5-7 month range. Keg'd w/ DME solution and yeast roused from fermenter during transfer.

Notes: Used 2nd generation WL840 from previous batch of American Lager. Excellent beer, reminisient of a German Pils with a lot more more body, or maybe an over-bitter Dortmunder. Hops aromatics/bitterness spot on for the style. In a judging scenario, it would probably score better as a Pre-Pro if the carafoam was increased and temp rests evened out between 148* and 160* to increase body. Maybe 45 mins each. |

Peeled the pith-free skins of two oranges and added near flameout.
This was a delicious, fairly light-bodied IPA. Plan to re-brew with 2-Row after stocking up on grains. Could use a touch more gypsum. Awesome head retention and clarity. A solid "stock" IPA. |

Notes: Pitched decanted starter of ~400B Cells. Pitched and fermented at 70* for 6 days then finished in 85* garage for a few days. Directly bottle conditioned from primary via valve and spring-loaded bottle filler.
Planning to add one packet of US-05 4-5 days into primary to combat this strain's tendency to stall. LHBS was out of French Saison which I would normally use for this purpose. |
