Notes: The Tree House recipe in the YouTube description has 14.5 lbs of grain, which would produce over 7% alcohol, too much for my blood. So I lowered the grain bill to 11.5 lbs, which should yield 6.1% ABV, and should be plenty. I kept most of the percentages from the original recipe, except for the dark grains, which I lowered to 3.1% each. I’m afraid if I keep it at 3.5%, this will be too stringent. We shall see. If I don’t get the deep coffee and chocolate notes, I’ll raise it back to 3.5%. Lastly, I added 1/4 lbs of flaked barley to give the beer some head retention. |

1 lb ~ 80 cherries. Suggested 1 lb/gal => 3 lb total => 240 cherries.
Dynamic Health - 500 cherries, 960 calories per 16 oz. Use a cup.
Knudsen's tart cherry juice - 260 calories per 16 oz => 135 cherries. Comes in a quart and the quart is cheaper, just go with this.
Received 3.5 gal of 80% 2-row 20% wheat from 5 Borough Brewing Company with an expected SG of 1.053. Grain bill is just to imitate the pre-boil wort provided. Everything else is additional.
Grind whole mahlab seeds just before adding 5 minutes before flameout.
Ferment at 3 psi. Add cherry juice concentrate with positive pressure. Let ferment a few days. Cold crash. Rack for serving. |
