Notes: Added 1 ounce of Galaxy hops to the primary fermenter while it was getting down to yeast pitching temp.
Pitched 2 liters of a 4 liter starter of Belle saison yeast at 70 and hold for 4 days.
Use a sanitized piece of foil over the fermenter for a pseudo-open fermentation.
Let free rise after 4 days total in primary to 75 degrees.
Check SG on day 10 and 13.
Bottle with table sugar 4.7 ounces.

Notes: Trying a 'Wild Blue' tribute (not a copy cat) to the INBEV/Flying Dog Wild Blue 8% Lager discontinued in 2019. In the last 10 minutes of the boil I am adding 16oz of 'VitaCost' pure blueberry concentrate. Then, during primary fermentation, when fermentation begins to slow down, I will add 7 pounds of crushed frozen blueberries. This will be bottled using the regular measurement of corn sugar for conditioning. |

Notes: To obtain 3 Liters of Framboise Concentrate you must boil 4 kilograms of Framboise (raspberry). Remove all pulp and seed with ultra fine strainer. Use boiled concentrate in secondary fermentation, and leave until FG: reaches <1.009, try to target <1.005 for better texture and flavor. Usually 20 - 25 days.

Aroma: Floral, Framboise
Crown: Light with fine bubbles, similar to sparkling wine
