You should freeze the raspberries in a plastic freezer bag, occasionally defrosting to help break apart the skin.
Brew the beer, throwing the Chocolate into the boil at the stated times. After a 7 day primary, rack into a 5g barrel for 28 days. I'm using a barrel for Seven Stills' Frambooze, which had a Framboise distilled into Whiskey. After the 28 days, rack onto the raspberries. Age to taste.

Notes: Ideally I'm wanting this beer to come out around 7%, so cane sugar will be added to the wort if the OG doesn't reach the desired amount.
Good and bad brewday. Managed to get the OG to 1.080, but somewhere along the line misplaced a liter of water here or there, so the pitching volume was 4l, meaning at very best it'll yield about 3 liters. The plan now I guess is to ferment in primary then put it into a glass demijohn. A taller vessel for secondary may make it easier to clear it. This also might make dry hopping a tad difficult. Fuck it. It's a small batch DIPA now.

Bottling date: 10/12/17, 2.2 Vol @ 9.3%
First taste: 27/12/17 - Start carbing beers a bit more. Go for something like 2.4-2.5 vols as most brews so far have little carbonation. 2.3 or 2.4 would have suited this brew better. Ease off the crystal malts the next time you brew an IPA as this one is a little bit cloyingly sweet. Very chewy mouthfeel but great hop flavours. Ramp up the bittering hops and definately look at a DH schedule next time. Not bad for a first DIPA. |

Brewing at low gravities presents many brewing challenges that I’ll likely detail in a future blog post. In a nutshell, good brewing practices are necessity, since any flaw will easily show. Additionally, in the recipe design, use base-malts and speciality-grains that have intense flavors, since low alcohol beers have small grists. For the session amber, I went with some flavorfuls malts I normally use in small percentages: Munich, Crystal 75 L, Aromatic malt, and made it the entire grist. On the yeast side of things, I suggest using a strain that will improve the mouthfeel. I used Wyeast 1450, which is a mouthfeel and caramel enhancing strain with a neutral ester profile. Most English strains are also good, but will usually produce some fruity esters, a must-have for any English-style session ales. |

6 - 8 cinnamon sticks.
fermentation started around 68 degrees; two secondaries - one we added puree and kept a small bit of yeast followed by another yeast-free secondary (I guess technically a tertiary) with added cinnamon and plum extract. Temp finished about 60 degrees.
