Notes: - Declorinacion del agua y ajuste de Ph a 5.2
- Si bien tengo dos fltros, me gusta ajustar el Ph del agua y
dejarla toda la noche destapada para que evapore cualquier
vestigio que pueda haber quedado de cloro.
- Macerado (mash) 90'
- 60 minutos macerado
- 30 minutos de re circulado (Adición de la cebada tostada para
no arrastrar taninos indeseados)
- Test de Yodo
- Hervido (boil) 85 minutos.
- A los 25' primer adición de lúpulo (60' hervido).
- A los 70' agregar serpentín enfriamiento para esterilizar.
- A los 75' agregar el clarificante de hervido.
- A los 80' segunda adición de lúpulo a los (5'hervido).
- Whirlpool
- A mano 5 minutos sin agitar para no generar olas ni
salpicaduras ya que esto oxigenaría el mosto quitandole vida
útil y dejar reposar.
- Con bomba 15 minutos y dejar decantar
- Enfriamiento máximo una hora
- Adición de la mezcla de levadura cuando el mosto haya bajado por lo menos hasta los 22°C
- Fermentar 1 semana (5 días fermentación 2 días descanso de diacetilo)
- Trasvasar al madurador y hacer el cold crash en heladera lo mas cercano a los 0°C que se pueda. Al día siguiente de dejarlo reposar en la heladera Agregar 2g de beer gelatin o algún clarificante de madurado. El tiempo de madurado es de 4 a 7 días.
- Embotellado y/o embarrilado según disponibilidad de cada uno.

Notes: Decided to double chocolate malt at last minute and add some cocoa powder at flame out to try and get a little more chocolate character.
Mashed in 5 gal at 152. Re-circulated for a few minutes in the beginning, middle and end. Heated 1 gal to 170, added to mash after mash out. Let bag drain a bit and then transferred to other brew pot. let bag just drain a little more and continued to add it to the boil pot. Ended up with just over 5.5 gal at end of mash out. pre-boil gravity seems to be around 1.052 which would indicate a very high efficiency. (unsure how accurate that was as the OG was somewhere between 1.056 and 1.058)
Added hops at about 180. Let come to a boil, added hops at 15 min and cocoa powder at flameout.
Took outside and used chiller, cooled fast. Put in fermenter at 63 and added yeast starter (done the night before so it was just finishing up fermenting when pitching). Warmed to 68. Fermentation started overnight.
OG was between 1.056 and 1.058 at 4.5 gal. Tilt originally had 1.058 but then dropped to 1.054 after adding yeast?
Kept temp controlled between 67-69 for fermentation. Tried to hold between 68-70 for the next few days, then just let it sit for almost another week.
Dumped trub twice at beginning of fermentation and wasn't a ton of trub, so waited until fermentation was done to try dumping again. |
