| Notes: Mesk inn og sirkuler som normal. Ikke kok, men warm vørteren til 80°C og hold i 10 minter. Kjøl ned til 45°C. Redduser pH til 4,6 ved forsikring å tilsette melkesyre.Tilsett forsiktig og unngå at pH synker under 4,6. Tilsett Lactobacillus. Tilsett CO2 i kjelen (bruse) for å unngå aerob bakterieinnfeksjon. Dekk kjelen med plastfolie for å tette den.hold temperaturen på 40-45°C til pH har sunket til 3,4 (dettet tar 24-48 timer). Varm vørteren til 80°C og tilsett humle og sitronskall. Hold 80°C ui 20minutter. Kjøl ned til gjæringstemperatur. Bruk økologiske sitroner for å unngå voks i skallet. |

Notes: 1 Bring 3.7 gallons Of water to 170.7 degrees.
2 Gradually stir in water and grain, cap cooler, and let rest for 60 mins. at 152 degrees.
3 Bring 1.5 gallons of mashout water to boiling, and bring 4.0 gallons of sparge water to 170 degrees.
4 Mashout: After 60 minute mash, add boiling water to mash, stir, and let sit 5 mintues to raise temp and free sugars from husks.
5 Recirculate about one-half gallon over the top of foil (to avoid agitating) on grainbed, or until wort fairly clear.
6 Drain mash tun contents into the kettle.
7 Sparge: Close mash tun valve, add sparge water, stir and let sit for 5 minutes.
8 Recirculate about one-half gallon over the top of foil (to avoid agitating) on grainbed and then drain until boil volume of 7 gallons is reached. |

DIRECTIONS
Mash malts at 152° F (67° C) and allow to rest one hour. Sparge at 168° F (76° C). Boil 60 minutes. Chill to 70° F (21° C) and oxygenate. Ferment at 68-72° F (19-22° C). “Active” dry hops are added 2 days after fermentation starts, and the “complete” dry hops are added after terminal gravity is reached. Allow to sit on a second dose of dry hops for 3 days, and then rack to secondary for a week. Rack to a keg, chill, and force carbonate. |
