No Sparge, full volume mash with recirculation during mashout.
2023 Indiana Brewers Cup: Bronze (19 Entries). My doppelbock with a very similar grist/process won gold.
Keg'd with DME solution and a little roused yeast before short diacetyl rest. Then lagered in the same keg for several months
Delicious bock in the 3-6 month range from brewing. Peaked at 5 months

| Notes: Boil for 60 minutes, adding hops according to the schedule. After the boil, do a whirlpool step: Stir or recirculate to create a vortex, add whirlpool hops, and allow 30 minutes to steep. Chill to about 61°F (16°C). Aerate the wort thoroughly and pitch plenty of healthy yeast. Ferment at 64°F (18°C) until the gravity has dropped to about 1.011 (i.e., about 0.5°P before terminal), then add dry hops. |

co-pitched 1 pack expired mothership brett blend with 2 packs expired french saison
also added 1/4 tsp DAP and <1/4 tsp yeast energizer
added honey in fermentor once cooled
OG is 1.052 (aug 14?) at temp 84F (1.054 at RT - topped off to more than 1 gal that is the discrepancy btw calc'd OG probably). Ferment open first day or two.
SG is 1.004 Aug 19 9day
