Notes: In this application, 1.2kg of extract and the ascorbic acid are diluted ad mixed into 30L of water.
This mixture is then boiled. Once the product reaches a rolling boil,add the Hallertau Mittelfrüh Hops.
Continue to boil the product for 30minutes.
After 30 minutes the heat is turned off and the Perle hops is added.
After a contact time of 20 minutes,the product needs to be cooled to 15C and then filtered.
The cooled and filtered product is then mixed with the apple flavor.
At this stage, the potassium sorbate is added.
This final mixture is then carbonated and packaged into
bottles. |

Notes: Witty Berry Braggot is a sweet, dry, earthy, almost cheesy brew. More drinkable than mead, dryer than ale, strong as a wine.
It is great as a not-so-sweet dessert wine to enjoy with a piece of cheesecake or chocolate, a nice smooth tumbler on the rocks to sip and relax with, or mixed with juice and seltzer for a light party drink.
The dryness of the wheat, mildness of the barley, and tartness of the cranberry all come together to balance the mead must well, making this one of the most drinkable varieties of mead I've ever had. |

Notes: Add 3 lbs Light DME to 6.5 gallons of water. Bring liquid to boil.
Add 0.5oz Target hops(bitterness) for 60 minutes.
Add whirlfloc tablet for 20 minutes
Add 3 lbs Light DME and 0.25oz Willamette hops(aroma) for last 15 minutes.
Bring to 70 degrees and transfer to primary fermenter.
