| Notes: Add sugar, water, nutrient to pot, hold at 180F for 15 mins. Chill with wort chiller to 90F, pitch yeast and ALDC into ferm keg. Ferment for approx 1 week at 90F in corny keg with floating dip tube filter until diacetyl is undetectable and terminal gravity is reached. Chill at 40F for 1 week at 5psi to aid with flocculation. Add 2.5 gal distilled water and flavor extract/malac acid to secondary corny keg. Adjust pH to 4.2. Purge with CO2 very slowly though the beer out tube and out of the PRV on the keg for about 20 mins. Use 1-2psi CO2 pressure, max. Pressurize to 5 psi and chill overnight to 40F. Closed pressure transfer from ferm into secondary keg. Shake secondary to mix well when transfer is complete. Store at 40F/15psi for 1 week. ~5 gal total volume minus ferm loss. 5% abv. 2.75 carb volumes. Enjoy? |

Put LDME in hot water bath
Add 4g of gypsum 2g salt
Bring 5.5 gallons water to 65C
Add steeping grains to sock and put in water, 30 minutes at <76C
Remove bag, put on strainer over pot to drain, bring wort to boil
Add 1oz cascade @20
Add half whirlfloc tab @5
Add 1oz Willamette @5
Flame out
Add LME and stir through
Siphon hot wort to cube
Top cube up with water to 5G
Seal cube
Get cube down below 90C (stop AA isomerisation)
Wait till morning...
Aerate wort and pitch W-34/70 @ 17C
Leave cube to ferment @17c
When activity ceases raise temp to 22C and add 1oz Simcoe dry
When FG stable crash to as cold as we can get
Add gelatin (1/2tsp dissolved in 1/4 cup water)
Rack into bottling bucket with priming soln

Notes: Based in the archetypal Steam Beer from Anchor Brewing in San Francisco, this California Common takes an uncommon step to the north, by way of Portland, pushing the hop bitterness to the edge of the style range and hopping up the flavor with a localing grown variety for a true Pacific Northwest crafted hybrid ale/lager.
To change it up(grade): swamp 1/2 the light LME for Briess Munich or ViennaPils LME; Or dry hop with more Nugget hops. Change up the crystal malts, dark or lighter--swap the midnight wheat with 1/4 to 1/2 lb. of Pale Chocolate malt to push the color and coffee/chocolate notes. |
