Notes: Mix 4 gallons of spring water with 18lbs of honey. Add nutrients and yeast. ferment at 68F.
After fermentation, add crushed campden tablets and potassium sorbate to halt fermentation. Wait at least 24 hours then transfer to a secondary and back sweeten with honey to taste.
At this point you can bulk condition or bottle condition. I prefer to bulk condition for a few months then bottle condition for a few more.
It is a super easy recipe and makes a great final product. If you want a melomel you can simply back sweeten with the fruit or berries or your choice. |

| Notes: Pour 2 gallons of water into brew kettle, steep grains at 160 - 170 degrees f. for 20-30 minutes. DO NOT BOIL GRAINS!!!! Remove grain bag and allow it to drain into brew pot do not squeeze. Bring water to a boil, add malt syrup while constantly stirring as to not allow it to burn on bottom of kettle. continue until it returns to boil. Add malto dextrin, add nothern brewer hops. Make sure pot does not boil over!!! Boil for 55 minutes, then add finishing hops,boil for an additional 5-10minutes. total boil time is 60-65 minutes. Cool wort to roucghly 70 degrees add yeast. |

Notes: I really like using orange peals while brewing - it pairs nicely with hops and highlights the citrus profile of the Cascade and Citra hops. This recipe utilizes dried orange peals from the Cara Cara orange. I buy them from Sprouts then dry out the peals in my dehydrator. Cara Cara oranges are a type of navel orange and is generally sweeter and less acidic than typical oranges. That makes them the perfect type of orange for brewing.

I originally called for 1 oz of orange peals in brew and dry hop but I upped that to 1.5 oz because that's what I had on hand. I also dry hopped in the primary rather than secondary.
Tasting notes:
This couldn't have come out better. It has a wonderful citrus aroma with a palatable, but not overly bitter, blend of hops. It's about as perfect of a New England IPA as you can get. Not as hazy as a lot of commercial varieties, but just as juicy.
Future changes:
The next time I brew I think I'll keep the 1.5 oz of orange peal both in boil and dry hop. However, I'll dry hop during the secondary instead of primary. I think I'll try the Imperial A24 Dry Hop next time as well. I was very pleased with A20, however, and highly recommend it.

Cool to 17C and pitch, raise to 19C after 24 hours.
Discussion Notes:
Tasty used a whirlpool for 30 minutes. If you can not whirlpool, it sounds like you can just turn the flame off and let the flame-out hops steep for 30 minutes before cooling. Tasty added dose 1 of the dry hops when the beer was within 1/2 degree plato. Three days later, he dropped the hops out of the conical. Then he added the second dose of dry hops. Tasty substituted Carastan for the Caramalt.
If you are not using a conical, Tasty recommends doing dose 1 of dry hop in primary, transferring to secondary and adding dose 2 of the dry hop. |
