Notes: Add 3 gallons of water to the brew pot. Place grains in a bag and bring the temperature up to 170 F. Remove grains and let drain. Add DME and Honey. Bring to a boil. Add Hops according to schedule. Boil for 60 minutes. Add water to brew kettle to make it 3 gallons. Place 2 gallons of pasteurized, sorbate free, apple cider into primary fermenter. Add 3 gallons of wort to primary. Pitch yeast when cooled to room temperature. At this point, you can add 1/2 tsp per gallon of pectin enzyme to help with clarity.

Notes: Method:
1. Boil and cool 2 gallons of water. Pour into sanitized containers (glass gallon jugs from apple juice or cider are ideal) and refrigerate overnight.
2. Bring 3 gallons of water to a temperature between 150°F and 160°F. In a grain bag, steep the crystal rye and 120L crystal for 30 minutes. Drain well, & rinse off the grain into the pot.
3. Add 0.4 oz of Citra hops. Bring to a boil and boil for 30 minutes.
4. Remove from heat. Add the 4 lbs of DME, stir well to dissolve. Bring back to a boil for 15 minutes.
5. Add another 0.4 oz of Citra hops. Boil another 15 minutes.
6. Remove from heat. Add honey and stir well to dissolve. Leave covered for 15 minutes to allow the honey to pasteurize.
7. Cool the wort in the pot. (Cool to the point that the water from the fridge plus the wort in the pot will mix to your desired temperature. that temperature depends on the yeast you've chosen. Look up optimal temps for that yeast, from the company that makes it, online.)
8. Using a sanitized funnel for this step, pour 1 gallon of the cold water from the fridge into the sanitized fermenter. Pour the wort into the fermenter. Top off with the second gallon of water from the fridge. Mix with a long sanitized paddle.
9. Pitch a yeast starter, or simply the yeast itself. Dry yeast should be properly rehydrated first, according to manufacturer instructions.

Notes: Used 280oz (14 imperial pints) of water for steeping. Lost a bit of crystal so down to 1 lb and 7 oz vs target if 1.5 lbs. steeped for 20 minutes but went a bit high at 175 degrees so turned off heat for last 10 minutes. Added 2 oz cascade to the boil to hit IBU target. My hops were lower alpha than target Added almost 5 lbs LME to the boil by mistake which meant that my wort concentration was a bit high. This will lower the alpha isometrization and slightly reduce bitterness.
After 2 weeks in barrel first sample was tasty but not quite like Manny’s. More like a hoppy ESB. Malt was a little strong so maybe use crystal 40. Hops were good. Strong yeast presence and lots of carbonation.
After 4 weeks there was still really good carbonation. Color was mid-brown, and while easily drunk it's not like any recognizable style - maybe part ESB, part pale ale, part something yeasty! |

Notes: Steep the carapils in 1 1/2 gallons water at approx. 150 degrees for 30 minutes.
Wash (don't squeeze) the grains with another 1 1/2 gallons boiling water as you remove the grains.
Add the DME and bring to boil then hop according to schedule.
Bring to room temperature and top up with cool water to 5 or 6 gallons total in primary fermenter.
When you feel fermentation is complete add the final ounce of chinook and citra hops to the fermenter to dry hop, and allow to dry hop for 7 days. |

After returning from Maui trip, FG 1.016 on March 16. Wort tasted a little too malty and sweey for liking. Not enough hops.
The Kegerator door was open when I checked so I theorized temp got too hot and fermentation stalled. Closed door and left alone.
Checked fermentation on March 18th no change. March 19-20 no change.
Pitched 24 oz more sugar and a new packet of US-05 on Mar 21
