Notes: Steep Crystal malt in a bag or sock in 2.5 gals water at 155 degrees for about 30 minutes. Slightly squeeze the bag to drain liquid, set aside the bag and bring pot to a boil. Remove from heat and stir in the LME and DME stirring to completely dissolve. Return to heat and bring to boil.
As soon as boil begins stir in the Tettnanger hops.
Add honey for the last 30 minutes of boil for a mild honey flavor or the last 10 minutes for a nice aroma
With 10 minutes boil left stir in Vanguard hops, orange peel and whirlflock.
Cool wort, aerate well in the fermenter vessel, top fill to 4g and pitch yeast, Your choice whether to pitch dry or rehydrate.
Your choice as to strain hops with a sock or strainer at pour.
I recommend leaving in fermenter for 21 days then bottle |

Notes: Coopers liquid malt extract is prehopped to approximately 20 IBU for a 20L batch --> IBU this batch ~40.
Add ~dozen juniper berries with dryhop
The LME was very old (8 and 4 years after expiration) and had turned quite dark. 1 week into fermentation the beer is perceived as tart and a hint of soy is present. pH measures as 3.7. Color is brown.
pH adjusted to 4.2 and stored cold around 1 week. At kegging tartness is much less perceivable, but soy tones still present. |

Notes: 1. Heat 2 gallons of water to approximately 155F
2. Steep grains while holding temperature constant (25 mins)
3. Remove bag and bring to a soft boil
4. Add .75 oz Warrior hops and 3 lbs of liquid malt extract (60 mins)
5. Add 2 oz of brown sugar (40 mins)
6. Add 2 oz cane sugar and 3 lbs dry malt extract (25 mins)
7. Add .5 oz Galaxy and Falconer's Flight hops (10 mins)
8. Once boil is complete chill wort to approximatly 70F
9. Add water to bring to 3 gallons
10. Transfer to primary fermenter, pitch yeast, and shake fermenter for 5 mins to oxidate.
11. Add seasoned chopped fruit to nylon bag and dry hop for 3 days
12. Add 1 oz of Lemondrop, Citra, and Falconer's Flight in nylon hop bag for 5 days, same measurements in second bag for 10 days. |

Notes: Mill the grains (including the oats) and place loosely in a grain bag. The oats will swell, so avoid packing them too tightly in the bag. Use more bags if needed. Steep the bag in 2 gallons (~8 L) at a temperature of 154 °F (68 °C) for about 60 minutes. Lift the grain bag out of the steeping liquid and rinse with warm water. Allow the bags to drip into the kettle for a few minutes while you add the malt extract. Do not squeeze the bag. Add enough water to the steeping liquor and malt extract to make a pre-boil volume of 5.9 gallons (22 L) and a gravity of 1.043 (10.6 °P). Stir thoroughly to help dissolve the extract and bring to a boil.
Once the wort is boiling, add the bittering hops. The total wort boil time is one hour after adding the bittering hops. Do not bother with Irish moss or other kettle finings. Add the spices with five minutes remaining. Chill the wort rapidly to 68 °F (20°C), pitch the yeast and aerate thoroughly. Follow the fermentation and packaging instructions for the all-grain version. |
