Notes: After one week fermenting at 62 degrees, transfer to secondary and add Wyeast 3711 French Saison yeast. Allow to continue fermenting at warm room temp (70F to 72F) for two to three weeks. Final gravity should be below 1.008. Good results using a heating belt to get fermentation temperature up to high 70s for last week of fermentation. Dry hop three days before bottling.
First batch primary came down to 1.014. Added 3711 and let ferment at room temp (72) for three weeks. Final gravity only came down to 1.011. Added 2 oz of grapefruit extract, 2 oz of Mosaic hops and kegged (dry hop in keg). |

Notes: My first recipe, tried to emulate a few that I've seen online and add a little twist. Going for a beer that has a session beer appeal, with a little bite. The .2 oz 30 minute Centennial and 15 minute Columbus additions will add the bitter, while the 5 minute Citra addition, and the second Citra addition at flame out providing a citrus like forefront. |

Notes: Based on supposed Leffe clone recipes found on internet.
Actual gravity measurements:
OG = 1.061
TG = 1.011
Primary 10 days b/w 68-70F
Secondary 7 days at 65F
Yield = 304 oz (12x 12oz + 10x 16 oz bottles)
Turned out great! A wee bit more bitter than Leffe, but pretty close overall and one of my favorite batches I've made. The yeast-imparted flavors were wonderful!

Notes: Made a 2qt starter...used 7.2Oz of Pilsen Light DME and stir plate for 24 hours at 73 degF. Pitched starter into 2L flask at 72 degF. Put starter flask in 55 degF refrigerator to allow yeast to settle. Decanted about 80% of liquid off of starter after letting it settle for about 3 hours.
Did a partial mash of 1 lb grain in 2 qt water for 60 minutes at 152degF. Sparged with 2 qt 170degF water.
Did a full boil of 6 gallons.
