Notes: My understanding is the WL 830 or 860 yeast can be used, but 860 gets closer to the augustiner yeast used in the original.
Used WLP860. Two step starter @60F, 1.038.

Adjusted IBU to 19 based upon Wynkoop's site.
Initial tasting notes: Less smoke than the original, also the malt character, while close, differs a bit - I'm guessing due to the yeast being a different strain from the original. Its not major, but if anything its a bit lighter on the palate than the original. The finishing hops should be higher as well as this clone is less noticeable on the nose. One could up the specialty malt percentages and finishing hops, but personally, I like this one so much that I'm not planning on altering the recipe. |

Notes: After mashing out, lauter into sterilised demi johns 9/10 full. Add bagged uncrushed base malt to some wort at 49C for 30 mins, top off demi johns right to the top with inoculated wort, and then blast some CO2. keep the wort warm, (30-40) for 36 hrs. take pH readings reguarly, close to 3.5 is the goal.
Slightly off cream corn smell should be expected, if there are vomit garbage shit smells then probably aerobacter infection.
towards 25-30 for clean lacto, toward 50 for citric funk. too high kills lacto.
15 min Boil and chill, ferment with clean ale yeast.

2020-5-8: After making a batch of this it's way too bitter at 56. Dropped the FWH to 10g/12 IBUs for a total of ~37 which should be fine even though it's below the 50 IBU minimum for the style. NWP is listed at 48 IBUs.
2020-5-26: bitterness mellowed. it's ok now but I'm keeping the
IBUs in the 40s for next time. |

Notes: Measured degassed gravity of real deal: 1.013 or 1.014. That's some heavy attenuation so appropriately picked San Diego Super Yeast. No crystal malts, instead use carmalizing from double boil.
Method: Single infusion mash and boil with half of the grains and mash. Mashed at 152F for one hour. Last minute hop additions from first boil (60min) added to the 2nd mash. 2nd mash done at 155F for one hour. 2nd boil done for 60 minutes. last minute additions done at whirlpool. Kicked off in under 10 hours with 1 gallon starter. |
