Mashed in 0815 7 gallons of water @ 152, dropped to 150 @45% power.
pH reading from 5m in 5.46.
45m in: 1.046
75m in: 1.049
Note: took some temp readings with new quick acting thermometer, anvil temp reading may be off.
with kettle set at 150, middle of the grain bed was 130f. wort out of recirculation line, 140f. I checked the sparge kettle, set at 180 - reading 180f on the thermometer.
Increased kettle temp to 155.
temp reading of 150 out of the recirc line, and about 149 in the mash bed.
120m in, 1.053. mashing out, heading to sparge.
sparged 3 gallons to 8 in the kettle, got 1.047.
Added about .5 gallons after the malt pipe drained on top of the kettle.
pH meter quit and none of the probes do anything but e03.
no pre-boil pH. will add just a little acid before boiling since acid additions were minimal.
broke for an hour at lunch, held temp at 200f.
pre-hop schedule boil for about 20m to get gravity above 1.050, to account for yeast pitch, which may lower the gravity a bit and I don't typically pick up .0013 in a boil off, it's usually about 0.007
over 60m.
began hop schedule at about 1300
Boil concluded at 1400, no issues.
refractometer indicated ~ 1.061 5 minutes from end of boil.
NOTE: Refractometer needs calibrating!!!
Tilt indicates 1.073 !!!!
post yeast pitch, 1.068
Anyway, chilled yeast for about 3 hours, dumped about half the liquid off the yeast cake and let it sit through the B/F happy hour zoom. once it was up to temp, pitched about 1800.
Efficiency was about 75%, but I boiled off extra wort to ensure I'd hit at least my target, but the refractometer reading was off.
Will review.
It's not too far off for a 65 ibu beer though.
Fermentation kicked off overnight.
by 3/3/26, PM, gravity at the halfway point or past, added in the dry hop charge.
03/07/26: 1.016, still getting activity in the blow off valve.
3/11/206: 1.015( green tilt, 1.013, maybe 1.012 on the hydrometer).
Nose is excellent. initial sample needs more carbonation, but, nice body, mouthfeel, good whirlpool hop flavor, nice color.
Warm, citrusy, and tastes good as it warms.
burst carbonating and will put on serving gas after a couple days.

04/02/24-1009 fgm pretty nice 9/10, definite tropical notes plus good bitterneess, beer was warm though.

• purge the dry hops with CO2 before dropping them into the fermentor. CO2 into head space when opening to add and when opening to remove hops from SS tube filters
- take off blowoff line and agitate aggressively twice a day
after 7 days, mild cold crash at 50 to 58 F (10 hours in cold box), and closed transfer using floating dip tube into new purged keg with second dry hop: FOR 2 DAYS
• purge the dry hops with CO2 before dropping them into the fermentor. twice a day: agitate aggressively and bubble CO2 at 30 psi for 10 second bursts from the bottom through Bev "out" line (release gas and repeat six times)
- hard cold crash and transfer to final serving keg
- Put on 10 psi at 36F for one week
Match heavy dry hopping rates with whirlpool hopping at a rate of 1 ounce per gallon at 180°F (82°C) for better bittering balance and increased hop-derived flavor complexity.
