Notes: From Shorts, listed in the March 2014 Zymurgy had to change the eff to 60% to get the right numbers, was for 6 pounds each of wheat and pale, 1 oz fuggles at 60 and half oz at 30 and half oz steep, way it was in the magazine gave much to high OG and IBUs,
These are the numbers to shoot for:
OG 1055 FG 1008 ABV 5.75% IBU 14
Need to adjust the Fuggles to IBU of 14
"Dry Hop" the orange and lemon zest 5 days before bottle while it is in the secondary, soak in sanitizer before you collect the zest |

Notes: Directions
Mash all grains at 156F for 1 hour and draw first runnings to kettle. Some amount of caramelization is desired in this beer.
To achieve this, take a two pints of the first mash runnings and simmer in a saucepan to reduce to a syrup, taking care to
not burn it. Do this while the rest of the wort is boiling. Sparge grains with 175F water to collect the full volume of wort.
Boil wort for 90 minutes, begin adding hops with 60 minutes left to go according to the schedule above and add the wort
reduction back to the kettle with about 5 minutes left to go in the boil. Chill to 58F and pitch yeast
Fermentation
Ferment on the cooler side of the yeast's optimal range, roughly 58F. The beer takes a while to mature,
so give it close to 6 weeks of time in the fermenter before kegging or bottling. |

Notes: From MoreBeer.com:
There are certain beers that you can't help but associate with a specific time of year, and there might be no better example than Sierra Nevada's Celebration IPA. As the year begins to wind down and we enter the holiday season, our eyes instinctively start scanning the shelves for those striking red labels.
Once you've enjoyed that first pint of Sierra's signature seasonal release, it's hard to resist leaning into the holiday spirit. Sierra brews this recipe every year with their most recent haul of fresh, hand-selected hops, making each release slightly unique to past iterations. Even though our clone kit doesn't contain fresh hops, we strived to make a recipe that celebrates the character of Cascade, Centennial, and Chinook hops with heaps of citrus, piney, and floral notes.
Our Holiday Hops kit is a classic West Coast IPA with a distinct, but balanced malt character, deep reddish color and plenty of hop bitterness to match the bite of winter weather. Cascade, Centennial, and Chinook hops are employed up and down the brew schedule, from the top of the 90-minute boil to the final dry hop addition days before packaging. We highly recommend using a Chico yeast strain for fermentation—it's a Sierra Nevada ale recipe after all!
Makes 5 gallons
Estimated Original Gravity: 1.061-66
SRM (Color Range): 12
IBUs: 64
Estimated Alcohol Percentage: 6.6%
Please note this recipe calls for a 90-minute boil. For the all-grain version, we suggest a mash temperature of 154°F. The recommended fermentation temperature is 68°F. The dry hop addition should be added after fermentation, allowing 5 days of contact time before packaging. |

Planing slightly bigger batch than usual to account for hop loss.
Efficiency post whirlpool including hop loss.
A04 + A20 is the same as A24 dry hop yeast, but that's hard to find. https://www.reddit.com/r/Homebrewing/comments/6dchwt/excellent_service_from_keystone_homebrew_supply/
Pitched at 70F, fermented in drheld's storage cellar (low 70s?).
Drheld says it's too sweet. 50% more bittering hops next time? Or actually whirlpool rather than sticking in the chiller in immediately? Alternatively, cut the crystal malt out?
