Notes: SG lower than expected, so I'm going to ask the store to mill the grain twice next time.
Great flavor at 2 weeks in bottle. Flocculation in bottle was poor at 2 weeks. Head development is low for a Belgian, but it may develop more over time.
Future attempt should use Irish moss instead of gelatin. Increasing the German pils by 2 pounds, plus a pound of bodying malt (wheat, munich, or carapils) should only enrich the flavor. |

Notes: Once mash is complete the wort will be boiled for 10 mins to sterilise, at this point two starters will be taken one for L.Plantarum and one for Verdant IPA yeast.
5 caps will be added to the L.P starter at 38ºC. When the temperature cools down to 38ºC, the L.Plantarum starter will be added to the wort.
The lid will be replaced and weighted to ensure limited exposure to oxygen. pH will be tested over a 16 hour period looking for a final pH of 3.5.
After pH reaches the desired value the wort will immediately be boiled for 90 mins. It will then be cooled over night and then added to the fermenter. |

Notes: This is similar to NEIPA 2, except that we've complicated things slightly :)
Adding roughly 20% of malted white wheat (in place of some base malt). This extra protein should improve head quality(?).
This in addition to 20% of oats. Why am I doing this again?
I've also added a meager 3% Crystal 40, in hopes of getting a slightly more orange tint.
I was originally going to make this Galaxy + (Cryo)Citra. However, fear of cryo-burn is real, so I've improvised a bit.
Citra down to 1oz (.5 of cryo). Add in amarillo of 2oz. Also scale back Galaxy slightly to 1.5 (big bag of it, and can overpower other hops).
Overall, 1 oz whirpool (0.4 / gallon) and 3.5 oz dry hop (~ 1.5 / gallon).
According to recent beersmith podcast w/ M. Tonsmeire, suggests up to (1 / gallon) whirpool and ( < 8 / gallon) dry hop. |
