Notes: Add 6oz (about 3/4 cups) of priming sugar to your bottling bucket if you are bottling. Sugar drops will cause too much carbonation for the Irish Stout.
Instead of using 3-4 drops of Lactic Acid to achieve the Guinness "tang", you can try this method I found from another brewer:
Four days before brewing put two bottles (approx. 24 oz) of Guinness in a bowl. Let it sit out on the counter at room temperature so it can sour. On brew day, when you have 30 minutes left in your boil, put the sour Guinness on the stove and boil it for about 10 minutes. At flameout, add this to your wort. |

Notes: Rebrewing this, just to confirm that the reduction of bittering and going to a gentler bittering...I am setting the Chocolate at 4 oz and adding 2 oz of midnight wheat for color and mouthfeel. Changing the hops to Columbus / Williamette. Edging ever closer to lovely Drafty Kilt.
I used Honey Malt this time, I may add some Melanoiden next time to crank the maltiness up more...tends to add benefits similar to decoction mashing. |

Notes: Mash with about 3.5 gallons (13 liters) of water at 164°F (73°C) and hold at 151°F (66°C) for 75 minutes. A temperature mash, recirculating infusion mash system (RIMS), or heat exchanger recirculating mash system (HERMS) method is highly recommended.
Sparge with 5 gallons (19 liters) of 170°F (77°C) water. Starting boil volume should be about 6.5 gallons (25 liters). Allow a full rolling boil for 75 minutes.
After cooling, pitch 1 packet or vial of yeast (a starter is not recommended) and ferment at 72–75°F (22–24°C) for 5–7 days or until complete. Rack to secondary and condition at cellar temperature (or cooler) for 2 weeks. Shoot for a medium to high level of carbonation whether bottling or kegging. |
