Notes: 2 smack packs used in two stage liter starter. Used Sugar Creek 6-Row.
Sacc at 152 for 90 mins ramp down to high 140's during errands.
No mash out after 90 mins. Wanted to continue starch conversion.
Light/malty profile with 1tsp 5-2 in both mash and sparge
Added 0.5 lbs DME to boil to reach PBG of 8.0
Really good. A little sweet. Longer PF next time. A more "beery" version of Budweiser. |

brewed last night. forgot to add the water agents smh. original recipe had me at 75% efficiency for 1050 OG, came out with 60% for 1040 smh. idk why i thought i would get 75, maybe because recently ive gotten higher efficiencies with double crushing the grain, but also this beer has a lot of flaked wheat and oats so i shouldve known it would be low.
Really if I had done my rule of thumb and left out the flaked stuff in the calculation i wouldve gotten to 75% on the rest of the grain bill.

revamping last years OFFSZN for rebrew as mommys bier 2.
* adding water profile and brewing salts. using shared ward labs profile for henrico county for september 2020.
* reducing nugget bittering addition from 0.5 for 60 to 0.4 for 45 to fall more in the middle of the accepted IBU range for this style
* reducing 2row from 4.5 to 4.5lb to account for good efficiency last time, knock the beer abv down from 5.89 to 5.3 (also more in the accepted range)
* added acidulated malt for mash pH
.....should i scale this up to 10 gallons though???? might not have space in the fermentation chamber....

Originally was supposed to hit 1049 on 5.5gal with 75%. Came out a little under vol, but 1055. Updated recipe as such.
I thought I was going to come out way under because of how light the wort was. And it's a small grain bill compared to recent recipes.

notes / changes from original aha receipe :
* swapped out yeast for wyeast.
* this is 5.5 gallons. since its even grain and hop values just leave it like that and aim for 5.5
* the spices are supposed to go in at flameout for only 5 mins in whirlpool - prob need to use a bag.
* recipe calls for 90 min boil but i dont think that is necessary. * ferment at 63 for 7 days then free rise to 73 for remainder.

Ended up losing 1 gallon (trub) to the kettle rather than trub in the fermenter . Mostly pb2 and trub. Total in ferementer was 5.25. May have to increase, dependent on what gets packaged. All other numbers were spot on.

Ferment at 63 degrees
Split the whirlpool hops; adding half at flameout. The other half once down to 165F.
Dry Hop in Two stages - 4 days each, split the dry hops in half also. Add the first half to primary. Stage one 8/29. Short .5 centennial, switching 1.0, increasing Apollo by .5.
10 day fermentation (63-64F at first, then ramp up to 68-70F once fermenation slows.
8 day, 2 stage dryhop in primary at 68-70F.
Rack to secondary and 4 day cold condition in the secondary at roughly 39F (basically refrigeration).
Force carb and drink 3-4 days later, or bottle and drink 1.5 to 2 weeks after priming.

As you can see, the layout of this calculator looks incredibly similar to the snapshot of the brew sheet.
Here are the results for 6 gallons: (Keep in mind, the Alchemist reportedly uses "Plaster of Paris" instead of Gypsum. Also, homebrewer lactic acid is typically 88% strength vs. the 85% version shown here).

I supplied two different results (in color). Notice the difference when using Calcium Sulfate Anhydrous (Plaster of Paris) vs. Calcium Sulfate Dihydrate (Gypsum) that must be used to hit 750 mg/L.
The information when whittled down, lines up... 6 gallons, approx. 21.6 grams plaster of paris, 1.2, grams calcium chloride, and then adjust mash pH to 5.1-5.3 with lactic acid. |

The original lists only extra pale malt, but SRM of 8.5. That seems impossible, so there must be some cara malt or else a lower SRM.
Need to manipulate the hop amounts some more to account for AA differences (and inventory). |
