Notes: This is a light interpretation of the style... for summer hot days.
I didn't like the Amarillo last time and I want to give S-04 another chance... also simplified the grain bill a bit... and first attempt at an all late hop beer.
Mash at 154°F: look "fully converted" at 30 min.
Whirlfloc at 2min.
Cool to ~16-18°C in ~30min.
Pitch sprinkled US-05 (02 2012) and S-04 (03 2011): one in each carboy after letting the carboy equalized to the temperature with the room
Fermentation temp. is ~14°C for both

X 20lts in FV 1
Safale US05 Yeast
60g Centennial - Dry Hopped
60g Mosaic dry hopped - Dry Hopped
X 15lts in FV 2
No dry hopping
Nottingham Ale Yeast
FV 1 will stay at home to be dry hopped for a week or so and FV 2 will go to the course, hopefully bright and hoppy ready for the students to bottle some to take home! |

This recipe is for the bottled version of London Pride. In the UK, London Pride is brewed to 4.1% ABV for cask and keg. In North America, the keg version available is the same strength as the bottled 4.7% ABV.
Ingredients
9.0 lbs. (4.1 kg) Muntons pale ale malt
14 oz. (0.40 kg) crystal malt (75 °L)
5.83 AAU Target hops (60 min)
(0.53 oz./15 g of 11% alpha acids)
2.63 AAU Challenger hops (15 min)
(0.35 oz./9.9 g of 7.5% alpha acids)
2.98 AAU Northdown hops (15 min)
(0.35 oz./9.9 g of 8.5% alpha acids)
Wyeast 1968 (London ESB) or White Labs WLP002
(English Ale) yeast
Step by Step
Mash at 149 °F (65 °C) for 60 minutes. Boil for 60 minutes adding Target for the full boil. With 15 minutes left in the boil, add Challenger and Northdown hops. Cool wort, transfer to fermenter and pitch yeast. Ferment at 68 °F (20 °C).

- Mashed at 147 for 75 minutes. This was due to how cold it was outside.
- Added 5.5 gallons of 163 degree water to mash and hit 147 for 75 min. Sparged with 175 degree water to hit 160 mash out/
Boiled for 60 min
Crash cooled and transferred to fermentation chamber
Set to 50 degrees ambient for 6 hours
Pitched yeast at 9pm. Starter was a single 029 vial that had been built up twice. Estimated at 300 - 400 billion cells.
- As of 7:30am Monday there was a nice 1-2 inch ring of krausen. I bumped the temp up to 52 ambient. Fermentation seems to be doing quite well.
Water profile on the right was used: Yellow Balanced

Spread 3 cans pumpkin on baking sheet, sprinkle with 1/2 cup brown sugar, and roast at 350 for 45 minutes before adding to mash.
From previous version: amped up all grain about 10%; increased relative amount of chocolate and added carapils for more mouthfeel; switched hops to Willamette and went from single bittering addition to 3 additions; increased ginger cinnamon and vanilla amounts. |
