Notes: IPA brewed with left over malt and hops in honour of The Legend of Zelda: Tears of the Kingdom launch. I brewed it to have something to drink while playing it some evenings.
It was OK but I think way to bitter. Almost as bitter as Link must have been when he realised he had to save Zelda AGAIN!
Next time I’d either drop the bitterness or balance the bitterness some other way, maybe with crystal malt or something.
I think I got a real strong note of lychee in this beer which I’ve never had before but I’m not sure which hop is doing that. |

What happens if you make a beer where you use pumkin as a fermentable and use as much of it as possible? The plan is to try to isolate the pumpkin flavor specifically. It will be roasted for 1 hour at 375F, but I will forego sprinkling with brown sugar. I want only the pumpkin sugars to be contributing to the mash. Then, I'll have to blend the pumpkin so that as much of the sugar as possible is accessible to the enzymes.

I'm using the wild ass guess of 8 as a starting point from this post:

The big question on this is will it finish fermenting? If I use the minimum recommended diastic power of the mash, can I get the full conversion? Will it just take longer? I've lengthened the mash to 120 minutes to see if it affects the conversion of whatever starches may be present in the pumpkin.
Furthermore, if you max out the pumpkin contribution as a fermentable, what on earth will it taste like? Pumpkin juice from Harry Potter? Will it just end up reading as a surprisingly normal beer?

2 sugar pie pumpkins reduced down to 19oz of roasted pumpkin when I did burninating the pumpkinside. This requires 56 oz of roasted pumpkin. That adds up to roughly 6 pumpkins, I believe.
EDIT:
They didn't have any more sugar pie pumpkins because it's the day after thanksgiving. So I am switching to acorn squash. Though Kate suggested that Butternut might have been a better choice.
EDIT2:
I screwed up roasting the acorn squash. I left them in the oven when we left for a party. Hours later we came home and the whole house smelled pungently of squash. I discovered I had never taken them out and the oven was still on. I composted the desiccated husks, and felt suitably shitty about myself about the whole thing.
It seems like roasting will cook it down and reduce the volume by about half. So for 3.5 lbs of roasted squash, I'll need 7~ lbs of raw squash. |

Notes: Target a Pilsner Water profile and mash Ph of 5.3. Ignore the Ph estimates in Brewers Friend, I use Bru'n water for these calculations and additions.
After Sparge….raise temp and boil wort for 10 min...turn off burner chill to 95F and add enough Lactic Acid to reach a ph of 4.5 (I have 4 tsp listed)...Add 16 oz of Pomegranate Blackberry Goodbelly drink, purge with C02, cover with cellophane and wrap in a blanket...maintain at 95F for 24 hrs.....then test for PH...target is 3.3 - 3.5, boil recommended time, add hops and flavorings per schedule and then chill to 64F.
Ferment for 5 days, 2 days at 64F then 3 days at 65F. Add 14 lbs of Guava Puree....and let ferment for an additional 7 days....at 66F. Transfer to Keg and chill to serving temp and carbonate to 3-3.5 vols. Enjoy!!

Notes: Halcyon - slight biscuit, brighter and lighter in flavor than pearl, less sweet than Marris Otter
Crisp Pale Ale Malt - might be worth using to get more maltiness/body because of better milling and run-off (perhaps a mixsture with Halcyon?)
Fawcett Caramalt - will contribute dextrins (body) and foam stability - light caramel flavor
coffee malt - slightly nutty / toffee flavor
Fuggles hops for bittering hops
First gold hops for slightly spicy but smooth flavor hops
Northdown hops for slightly floral aroma hops
West Yorkshire Yeast for chewy, dry, moderate nutty and stone fruit flavor
blended with London Ale because it is also dry, but lends a little bit of richness, mineralness with a little bit of fruitness
