Notes: I've been editing this recipe based on my first attempt from the linked source. My impression of my first attempt was that the beer was a bit too hoppy and lacked the malty assault I was expecting of a Conway's clone.
Some key deviations from my first attempt (from source):
- Grain bill now uses Maris Otter as a base and 2 lb portion of Munich. The roasted malts are largely the same.
- I like to start with distilled water and add my salts, and I've learned a good bit about water chemistry since my first attempt. This time around I picked the balanced profile to get a decent baseline. This is different from the first attempt, where I arbitrarily used 5g of gypsum and called it a day.
- Switched to Safale S-04 yeast from Wyeast 1028 (London Ale) just for fun. Have been using Wyeast for all my beers until now.
- Replaced Hollertau Mittelfruh with Styrian Goldings to pair English hops with more English hops. This is more OCD than practical. |

Notes: The Maris Otter is cold smoked for two hours using alder wood
(whole, not krushed)
Let the malt breathe for 1-2 days before mashing. It is best not to store the smoked malt long term.
The finished beer should be fined with gelatine and racked off the kveik sediment.
For a modern twist, add:
10g Cascade @60 min
50g Cascade @10 min
25g Cascade dry hop |

Tasting Notes: Malt focused with hints of caramel, fig and slight toast. Medium to medium-heavy body
Mash: (150F)
- 26 lbs American 2-row
- 2 lbs Vienna malt
- 1 lb Carapils
- 0.75 lbs Caramel 40L
- 0.75 lbs Caramel 80L
- 0.375 lbs Dehusked Carafa II
Hops:
- 1.5 oz Columbus (13.7% AA) - 60 min
- 1 oz Willamette (5.2% AA) - 10 min
- 1 oz Willamette (5.2% AA) - 0 min
Yeast:
- Wyeast 1335 British Ale II
I have brewed this beer nearly a dozen times to hone in on this relatively simple recipe. The two types of caramel malt give some nice color but also contribute a complex flavor profile of caramel and dark stone fruits. The dehusked carafa II adds a deep ruby hue. The carapils helps to form and maintain a dense, lasting off-white colored foam cap which laces down the glass, but does not make the beer too full-bodied.
The dehusked Carafa is also known as Carafa Special |

FG points hould be about 0.070 *(7/8*(100%-76%) +1/8*(100%-100%)) =0.015
so apparent attenuation including candi is (70-15)/70= 78%

Notes: I would recommend this yeast because it leaves a bit of residual malt behind. Extract can tend to leave a bit of residual sugar behind (sometimes too much) which is why I subbed in some corn sugar, if you use it put it in a 10min. If you don't want to use it the beer will end up around 6% with an estimated OG of 1.060. It's really up to you. I would recommend using 2 vials of yeast for this brew because the OG is a bit higher. If you don't want it spicy hop flavor sub out the Willamette addition for cascade. You could also use centennial instead of cascade. Let me know if you want to dry hop but I would do it with a couple ounces of cascade or centennial. I looked at the rise up red and it said it's pretty much all cascade and centennial. If the AA% is way off let me know and I can update it and send you a correction. If you can keep fermentation temps below 70F that would be ideal too, especially if it has been hot in the "Hood". Happy Brewing! |
