Carrots - Some people puree and add to mash, some add to fermentation
Pecans- Essentially, pecans can impart a lot of oil that can interfere with head retention of the beer. According to a forum post, Southern Tier roasts the pecans for 15 mins at 350 and places them on brown paper to drain. Then chops them, then repeats 3 times. Sitting for a few days reduces roasted flavor.

Notes: Freeze dates before fine-chopping (keeps knife a little cleaner). After chopping, create a heavy syrup by heating dates for an hour in 5 quart pan with 6 cups water over medium-high (not quite boiling) heat, stirring to prevent scorching. Add date goop and fruit remnants at beginning of boil.
Add honey at 5 minutes remaining, with Saaz.
My gravity went from 1.074 to 1.01 in primary (6 days), 1.01 to 1.003 in secondary (7 days). You may not get same yeast efficiency, but the ale should be quite good nonetheless! |

Notes: After initial rest of 35 minutes at 119˚, ramp mash to 145˚ over 25 minutes. Mash 90 minutes total.
Add dextrose with 15 minutes left in the boil.
Hop stand or whirlpool Citra, Mosaic, and Cascade starting at 170˚ to 175˚ for 30 minutes.
2.5 oz. Citra pellet dry hop 1 @ 50% apparent attenuation (1-2 days after brew day).

Notes: Mash at a fairly low temperature, 148° F to allow for the drier style. 60 minute boil with the addition of 1 ounce of dried juniper berries with the 1/3 ounce of Azacca hops. The remaining hops are added at flame out.
Chill the wort to no less than 85° F. Under pitch the Omega brands Kveik yeast and maintain the temperature throughout the whole fermentation. This hot fermentation will allow for the yeast to produce esters of pineapple, mango and other citrus from being stressed and under pitched.
The beer can then be chilled and kegs in only 10 days! |
