Notes: 4 oz (113g) Simpson’s Crystal Light sub UK Crystal 35L - ish
Mash at 150°F (65.5°C). Using lactic acid, adjust mash to achieve 5.1–5.3 pH. Dry hop when gravity falls below 1.020, but take caution as nucleation sites may cause a geyser. Start with a few pellets, let the CO2 settle, then finish the dry hop under positive pressure. Do not remove yeast. After 7 days on hops, crash beer to 32°F (0°C) and hold for 4-5 days before racking to keg or bottling.
Omega Tropical IPA. Ferment at 75 degrees for 5 days, then let free rise to 78 degrees to finish fermentation. |

Notes: 高知県産の柚子と塩を贅沢に使用したゴーゼ。苦味は控えめにして酸味と塩味とのバランスを重視した。味のイメージはドライな柚子サワー。ビール好きな人にはもちろんビールが苦手な人でも美味しく飲めるがコンセプト。
For the recipe, I recommend a mineral-rich salt. We use a local sun-dried salt, but Sel de Guerande is another good option.
I suggest adding the yuzu zest to the boil. The bitterness extracted from the peel will add a nice character and a more complex, well-rounded fruit flavour.

Notes: Excellent result - seems to be a very reliable recipe.
10 days in the fermenter at around 18/19C. Ready to drink after only 7 days post bottling rather than the normal 14.
Fruity - mandarin, not grapefruit as intended. Good haze with a reasonable bitter bite and well balanced malt body.
All in all, very drinkable fruity NEIPA with very good feedback from all tasters. Works at cask (10C) and fridge temp (5C) |

Acidulated malt to adjust mash pH to 5.2 Mash the grains at 151°F (66°C) for 25 minutes. Vorlauf for 15 minutes then run off into the kettle. Sparge the grains and top up as necessary to get 6 gallons (23 liters) of wort, or more, depending on your evaporation rate. Boil 60 minutes, adding hops according to the schedule. Whirlpool for 45 minutes, adding first whirlpool addition at the start and the next after 20 minutes. After the boil, chill the wort to slightly below fermentation temperature, about 64°F (18°C). Aerate the wort and pitch the yeast (ensure a healthy pitch of the correct amount yeast). Ferment at 65°F (18°C). Add dry hops according to the schedule. Crash and remove dry hops on Day 11.
BREWER’S NOTES
Add acidulated malt to adjust the mash pH to 5.2 (1 percent of acidulated to malt per 0.1 of pH reduction needed). We target a 5:1 chloride-to-sulfate ratio in our mash and shoot for about 155 ppm of chloride. We also find we like our beers with a firmer bittering charge than is often seen. |
