Notes: **Brewed 6/28/22 - Too much water. Reduce sparge water volume and careful to only start with 6.5 or 7 gallons max. Did not boil off as much as expected even with lid partially on with 2 clips.
Resulted in 1.066 per TILT and 1.072 with hydrometer at around 6.5 gallons instead of 5.5. |

Jam-packed with two of our favourite hops - Columbus and Centennial, it has 198 (yes one hundred and ninety eight) theoretical IBUs. We use a lot of caramalt, some amber malt and some chocolate malt to give the little beer as much body and mouthfeel as possible and the ability to handle all the hops we threw at it. Notes: Sugar is added 5 minutes until flameout directly to the boil
1/2 minerals added at mash the other half added during the boil after sparging.
Ferment at 64 then let naturally rise into mid to high 70's to finish. Add oak once most of ferment is done before racking for 5 days.
Total water needed is 20 gallons. Mash strike temp is 9 gallons at 130. Sparge at 170 with the other 11 gallons Use Herms to keep mash range at 145 for 45 minutes then raise up to 150 for 15 minutes.

Notes: No water dilution. Use tap with water agents.
Combine unmalted wheat with 3/4 lb. Belgian Pilsner and 3.25 gallon water. Bring to 140F and hold 15 min. Raise temp to boil and boil 30 min., stirring constantly. Remove from heat
After boiling mash for 30 min. Strike remaining grain in mash tun with 1.1 gallon water @136. Let rest 30 min. or until cereal mash cools to 148F.
Add cereal mash to mash tun. Stir to combine. Temperature should be about 141F. Cover and hold for 30 min.
Add 6 qt. boiling water to raise temperature to 158F. Cover and hold for 30 min.
Add 7.2 qt. boiling water to raise temp to 170F. Rest 10 min. Add additional .5 gallon water before draining wort.
Proceed as normal.
