Tart. Not infection tart, but chemistry tart. Also a bit cider-y.
Probably due to the amount of brown sugar added to bump up
gravity. Bump up the carbonate amount next time and reduce
sugar or eliminate. Needs more chocolate and/or roast malts for
color and flavor.

First brewed in 2010, Alice Porter returned as a seasonal in 2015. The beer was originally created and brewed for (real life) Alice Porter’s impending nuptials to the Beer King of Leeds, Matt Gorecki. The Sorachi Ace hop addition at the end of the boil gives the beer a subtle vanilla flavour that helps to lighten the beer.

A salted caramel popcorn Imperial Ale. Bourbon and Rum barrel aged, this 12.8% ale has complex and twisting flavours. Bitter caramel, wood, smoke, spice, treacle and vanilla are all present and intertwine against a smooth and lightly chewy mouthfeel. The salted caramel popcorn lends subtle hints of a smoky brininess. By soaking some oak chips in bourbon, then steeping in the beer you not only get an authentic Bourbon taste - the beer will also gain ABV! Add salt to taste, too much will totally ruin the balance of the beer.

Notes: Cereal-mash the unmalted wheat:
1. Crush the unmalted wheat with 500g of pilsner malt and put in a big pot.
2. Add cold water until the mash is like thin porridge. Add more water if/when the mash thickens while heating. In my case I ended up using 7 litres of water.
3. Heat up the mash to 70C and hold for 5 minutes.
4. Bring the mash to boil and boil for 30 minutes constantly stirring.
5. Mix with the main mash. Remember to calculate the strike temperature of the main mash. Afterall you are adding boiling mash into the main mash. |

Notes: Saison ble i gamle dager laget på gårder i det fransktalende Wallonia i Belgia på vinterhalvåret, og lagret sånn at sesongarbeidere skulle ha en leskende drikk når de jobbet på jordet til våren.
Ølstilen har vært langt vekke en lang periode, men har blitt vekket til liv igjen i revolusjonen av håndlagd øl som vi nå opplever.
De gamle saison-ølene var gjerne svake i alkohol (rundt 3%) for å være mer leskende enn berusende, men etter revitaliseringen av Saison har dette endret seg noe. En saison er en lettdrikkelig øl som opprinnelig er uten spesiell humleprofil, men som får krydderaktig smak av gjæren, da spesielt om dette gjæres på temperaturer opp mot 26 grader.
Saison er ofte tåkete, har mye kullsyre og er tørr.
I dette ølkittet får du en veldig ren og "crispy" saison, og en god ettersmak av gjæren. Du vil få mer kryddersmak desto høyere opp i temperatur du kommer under gjæringen, men det er viktig å starte på normal temperatur 18-20 grader. La den stå i den temperaturen i minst 2 dager, før du eventuelt øker temperaturen. Øk en grad om dagen til du når 26 grader og hold der til ønsket gravity. |

Notes: Begin mash with 28 qt of water at 127 F. Conduct 35 min protein rest at 122 F. For a 30 min decoction, boil approx 12 qt of thickest mash. Add back into mash tun and raise temp to 165 F. Hold for 30 min saccharification rest at 165 F. Fly sparge 1 gal and collect approx 6 gal of wort.
