Pitch yeast at 65, maintain temp until final gravity is reached. Boil oak cubes in Port Wine and cool. Add to secondary fermenter and rack beer. Secondary fermentation at 65 for 14 days, then bottle condition 2 weeks.

Notes: It is a hot summer in Phoenix, so why not make a decidedly American spin on a Kolsch. Not really a true Kolsch, more a Kolsch Style Ale with the idea being inspired by the KSA from Fort Point.
Fermented at room temps and cold crashed for a few weeks. San Diego Super Yeast ferments clean (and fast), allowing the malt and hops to be the star. |

Notes: My mash tun is a 10 gallon size, and this brew has it about 35-40% full. It does very poorly at this volume, so the 2 mash 'infusion' steps that add about 1/2 gallon of boiling water are really just there to help it regulate a good mash temp over the 90 minutes.
It's really intended to be more of a single step mash @152 but these adjustments are just for my equipment.
Recommend bagging the strawberries to minimize the haziness.
All the salts/soda/acids pertain to my water profile.
When I added the strawberries (and they thawed) the gravity went up by about 3pts. My OG was more like 1.055 and 1.008 FG. |

Notes: Strike water was about 175 which brought everything down to about 152 on average (154 in the middle). The mashout actually ended up being too strong and brought it up to 180ish so I put 2 quarts of cold water in immediately to try to stem tannen extractions. I got lower efficiency than I expected. Not sure why but could have been the 2 row pale or that I had grain balls that didn't convert. |

Notes: For those of you who don’t want to sit around for hours chewing up corn (we know who you are), use the following recipe. Crush the germinated corn coarsely and pour in the brewpot with 8 quarts of cold water. Sit and let sit one hour. Bring it to a boil, add the sugar, then lower the heat and simmer three hours (stirring regularly). Add whatever spices you desire at the end of the boil. In this recipe we use cloves but you can use anything from cinnamon to ginger. Remove and let it sit for one hour. Next, strain the liquid into a fermenter using a strainer, cheese cloth or any other method you prefer. Once it cools to 70° F (21° C), pitch the yeast and ferment at room temperature (between 60 and 75° F) for five days. Rack to secondary and ferment for one to two weeks until clarified. Bottle using 1 teaspoon corn sugar per bottle for priming. Finally, let it sit two more weeks after bottling before drinking.

Notes: I toasted 2 pounds of Vienna on 2 large sheets on different racks, one medium one low then switched after 15 minutes, the taste of the toasted grain was noticeable in the first 2 weeks then blended in nicely, I left the roasted barley in the entire mash, it was noticeable as well but blended nicely, I recirculated the entire mash, after fermentation I lagered at 34 for 2 weeks while carbing slow. I can't put this beer down, I'm calling this my Ozarks Red |
