Notes: START TWO DAYS BEFORE BREW DAY!
3 cans of Liddy's Pumpkin sludge sat in a strainer for 24 hours to drain excess water. Smeared across baking sheet then baked at 350F for 45 minutes. Take out of the oven and add molasses, brown sugar and maple syrup. Mix into pumpkin mush then bake again for 45 minutes checking often to prevent burning. Orange goo should now look well-baked but not burnt. Chill in fridge |

Notes: 20 liter fermented with my house culture, with added wild yeast cultured from raspberries and Lactobacillus Plantarum.
No hops added, this needs to get as sour as possible.
5 liter left overnight in open fermentation bucket for spontaneous fermentation (first cooled to 55C to prevent melting of ferm. bucket.).
Hope this ferments down to 1.000, then 7% ish alcohol.
Once fermentation starts will be oaked with 1 gram/liter of american oak.
The chocolate/roast tones would do well with some forest fruits i guess. Add this in a few months.

A variant on the 2008 release of Bad Pixie, but hoppier. Substituting the lemon peel for Ahtanum provided a vibrant floral and lemon citrus hit, balancing the slight tartness from the wheat. This dry, effervescent brew is perfect on Scotland's one day of summer. Give the juniper berries a quick blast in a food processor to break them up - otherwise they can jam up your fermenter.

Our sour recipe for all fruit Blitz beers uses a process called kettle souring. In this we steep a bag of malt in the wort to allow the bacteria to grow in it. Making sour beers is an art, and is mostly related to trial and error with your process. Experiment with different temperatures for steeping the grain. 40 - 50°C willallow the lacto to grow and produce a clean profile.

Notes: Begin mash with 28 qt of water at 127 F. Conduct 35 min protein rest at 122 F. For a 30 min decoction, boil approx 12 qt of thickest mash. Add back into mash tun and raise temp to 165 F. Hold for 30 min saccharification rest at 165 F. Fly sparge 1 gal and collect approx 6 gal of wort.
