7.125 gallons of water (including water used for salt additions) is exactly right!
Added 1 oz Citra with the Amarillo for the 5-min addition. Held hops and coriander/citrus in wort up until yeast pitch.
June 2022 notes:
Use pH 5.2 for mash water. No dry hops.
May-June 2021 notes:
Add 1 lb grain (0.5 lb each 2-row and wheat malts) to compensate for low efficiency (65% = achievable target; prefer 70%)
Coriander prep = 8 minutes at 300F convection. Let cool; lightly crack with rolling pin.
Add Dry hopping for depth of flavor/aroma.
June 2020 recipe revisions:
Adjust pH with lactic acid; reduce Cl to SO4 ratio to 1:1.
Add 1 lb grain: reduce wheat grist ratio; sub some pilsner malt.
Adjust hops additions for low to mid 30s IBU.
Increase yeast pitch rate: 150 g recycled refrigerated Kveik slurry
May 2020 tasting notes:
Recycled kveik "experiment" successful: 25 grams frozen kveik "cake" produced active fermentation within 3 hours!
Citrus and Hops flavors shine and wheat maltiness is nice complement. Overall tastes a little thin and soft; could use a bit more yeasty crispness/dryness.
"Original" profile (May 2020):
Recycled Voss kveik (OYL-061) that was harvested from a batch of NEIPA. Reconstituted Kveik yeast: 25 grams of frozen/dried slurry.

Notes: Beautiful deep red with cream coloured head.
After a touch of brown malt in the first taste it becomes rich and complex with a faint suggestion of marmalade. Noticeable bitter finish as you expect from the IBU. |

9/30/2017- carbonated last night. I did two separate 5 gallon carboys with one of them pitched with dregs from the Flagship yeast that was either infected with brett or some cross-contamination with a Belgian strain. The other 5 gallon carboy was pitched with Funk town yeast. The funk town yeast had a more neutral flavor and aroma profile with the other lending to a fairly pronounced Belgian character. Either way, I blended the two 1/2 and 1/2 to both kegs that I racked in.
I do like the interplay of the subtle characteristics of more complex yeast strains on hop forward ales. However, I think what I'm getting isn't subtle enough. The base malt, hop bill, water chemistry and etc is right on point, but I think I'm getting more of a Belgian IPA beer that comes across fairly cloying/sweet. The Funktown ended at 1.018 and the other ended at 1.008 with the blend being about 1.013, but the dominant character is the stone fruit hop characteristics accentuating the banana/clove character. Probably need to watch on my pitching rates a little closer (Although I did a good size starter) and/or give a little more time to dry up on the funk town strain.
might be smart to do separate yeast starters for brett-sac and Vermont with 1 liter of vermont and 1/2 liter of brett-sac for getting better ratios and healthier pitching rates? |
