Mash at 45-62-72-78°C. Hop pellets rather than cones, 95% of the hops used are German or Slovenian. Yvan : "Tettnanger and Saaz stand for the bulk, and beyond them, we primarily use Savinjski Golding and Hallertau Hersbrucker".

Collect wort at 21-22°C; weak beers are allowed up to 26°C to encourage esters, strong beers up to 24°C to minimise fusels. 5-6 days in fermenter and 14-15 days in secondary at 23°C

It has a wholly unique flavor: a bright lemon stiffened by minerally hard water up front, then a slow evolution into a dry herbal finish....The beer may be hop-heavy (in addition to bittering additions, Senne dry-hops Taras Boulba)....“It’s a yeast we’ve chosen carefully for the subtle, mellow esters it gives. We enhance them using very flat fermenters we designed ourselves.” He points out that the bitterness comes from the hops, not phenolics, but I’d emphasize all the heavy lifting the yeast does in other ways. Esters up front accent the lemony hopping and create the spritz that buoys this beer. In Taras Boulba, the way those esters work with the bitterness, the way their aromas harmonize with the citrusy hops, are what tie the beer together.

Notes: I've had a couple of "golden stouts" that I thought were very interesting and good, so my goal was to mimic that with my own recipe. I wanted to use golden/blonde ale as a general style, though I knew this was going to fall outside of some style guidelines.

I used lactose to provide some residual sweetness (think creamer in coffee), which worked really well I think. I tasted the beer after a few days in the keg (pre- coffee addition), and it had some sweetness but not too crazy. To add coffee flavor, I got some whole beans from a semi-local roaster (Wichita Spice Merchant). I spoke with one of the roasters there and he recommended "Brazil Maniqueira" (https://www.spicemerchant.com/product/brazil-mantiqueira/). I know next to nothing about coffee, so I would recommend using something you like or, if possible, consulting your local roaster. I added 8 oz of the coffee beans to a nylon mesh bag with some glass beads (to use as an anchor), and suspended the bag inside the keg with some unwaxed/unflavored dental floss. I tasted at 2 hours and was surprised how quickly the coffee flavor came through, but it wasn't quite where I wanted it. I tasted again at 4 hours and 7 hours, at which point I decided to pull the beans. The beer is pretty light so I didn't want to overpower the beer with coffee flavor. It ended up adding the desired roastiness and complexity that I was looking for. I'm super happy with this recipe.

I picked this recipe up while traveling around Norway. My host and fellow homebrewer, said that this is probably the most authentic Norwegian style ale that is still produced. Inspiration for this recipe came from Voss Brewery, Norway.

Notes: Brewed 12/17/16. Strike water was 169F and hit right at about 152/153. Only recirculated a half gallon because of this. Sparge went well and nothing stuck was able to get full volume without cutting as it didn't fall below 2 brix, got close though. Kettle efficiency was 82% which is a little lower than expected. Hit everything on the nose including the gravity. Temp cooling went faster due to low OG I believe but still need to look into a different temp cooling method to quicken things up. Pitching temp stabilized at 63F. 12/18 temp was about 62F so I cooled to 61F. 12/19 and 12/20 temp was sitting at about 62F the whole day. 12/21 I put a heater into the beer and kicket it up to 68F. Out of the swamp bath on 12/26/16. 1/5/17 I transferred the beer into the keg and added the flavor grapefruit compound from Amoretti. Attenuation was a little lower than expected but that is ok, looking for something sweeter anyways. I went with 4oz of the compound. Directions said 1/2 - 1% concentration and 4oz was about 1/2%. Bottled on 1/9/16 and carbed to about 2.9 volumes. Won an award in the BAM World Cup of Beer

This couldn't have turned out better, with the ten day fermentation and 4 day cold crash and an inch of yeast in the secondary, this turned out very clear, has a very slight bitter taste at first and a Simcoe flavor and smell to it, if you ask me this was free since it was all the ends of bags, good pale ale

p.s. this yeast takes 2 to 3 days to start working then it explodes with a huge kroesen be patient and make sure you have room
