| Notes: Using 3944 yeast prepare 2L starter, 12-24hr. Cold crash starter into two containers. Use one for primary fermentation and the second for bottle/keg fermentation. Mash with Robobrew V3. Grain conditioned with 2% H20 of grain weight. From RO/distilled water: 12g CaCl and 6g Epsom Salt in 44L of brew water. Perform single decoction on 1gal of mash during 30min protein rest at 122degF. Mash at 149degF for 60min, mash out at 168degF for 20min. Sparge with remaining water until extraction complete, check with refractometer. Boil for 60min, 15min of 0.5oz magnum at boil start. Coriander, orange peel, simcoe, and CTZ steeped at flame out. Chill and transfer to fermenter. Pitch when wort is held at 68degF in refrigeration chamber using 3944 yeast from 1L starter taken during wort boil (prior to hopping). Ferment until complete, ~2weeks (this yeast finishes slow, don't rush!). Agitate fermenter if fermentation appears stalled during second week. Sit at least 2 days on yeast after hitting final gravity to allow cleanup. Cold crash to 32, then lager at 45 for several days. Transfer to kegs or bottles and pitch second half of initial starter yeast allowing bottle/keg fermentation and natural carbonation. Beer will be ready in 2 to 3 weeks. |

Notes: 190g Ginger grated plus a whole sliced nutmeg baked in the oven for 5 min on baking paper to remove oils. Added at start of boil.
Day 6 added about 100g of sliced ginger plus a whole sliced nutmug (baked) in a sock soaked in starsan as yeast activity had driven off ginger aroma.
Pretty much perfect balance of flavours. Good biscuit plenty of ginger and a hint of nutmeg. |

Notes: I had a dream about making a beer like this. So this recipe is a product of that dream. A rich, red, imperial style ale that's not so bitter as is traditional for a strong ale. Thick head with long retention. Hope it turns out like it did in my dream!
I will be remaking this in the builder on Picobrew since I'm using a Pico Z to make it.
Notes to follow first brew.
OG from first brew: 1.069 - .02 lower than calculated on the z builder. Be sure to mix your oats in well. My oats weren't distributed well enough.
FG 1.022. 6% ABV. Very wet, delicious, but not what I wanted gravity wise. That and it is not boozy enough... Going to drop the mash temp to 154 to dry it out a little.
I may have cold crashed too soon. We had some weird temperature changes that made it hard to regulate, even in a converted freezer with a dual control inkbird. 90+ degrees in the day, 24 at night for a week.
Brewing again in a few weeks. |

Boil in 2 gallons of water (OG: 1.116): 3# Amber DME 2# Maple Syrup 1# Dextrose
Chill and keep refrigerated. Add this mixture 1qt per day starting at high krauesen, along with a small bit of yeast nutrient with each addition.
Actual OG of starting wort: 1.109 Adjusted OG after sugar additions: 1.104
Starting wort OG 1.109 x 4 gallons (4.436) + Admixture OG 1.116 x 2 gallons (2.232) = (6.668) / 6 gallons = 1.111 adjusted OG
Apogee is aged on vanilla beans, macadamia nuts, cinnamon, and black rum. Perigee is aged on cocoa nibs, toasted coconut, ancho chilis, and bourbon. |

Notes: Mash in the malt with soft water and hold at 148°F (64°C) conversion rest for 75 minutes. Lauter and sparge. Boil for 60 minutes, following the hops and additions schedule.
Gravity should be about 1.064. At the end of the boil, add the lemon peel and ginger. Adjust to taste. Be careful with the ginger. It’s very easy to overdo it.
Chill the wort and aerate it with pure oxygen or filtered air and pitch the yeast at 64°F (17°C). Let the temperature free rise to 72°F (22°C). |
