3rd Decoction: 3 quarts
After sparging we had only 6 gallons in the kettle, and decided to add 0.5 gallons so we could still boil 6.5.
Pitched 3/4 pack of WLP300 @ 72F into temperature controlled catalyst fermenter set to 72F - started bubbling in approximately 2 hours. 5.5 gallons made it into the fermenter. Extremely vigorous fermentation after 24 hours with high amount of CO2 blowoff. Vigorous fermentation lasted for approximately 48 hours, and continued to ferment with a medium amount of blowoff for the next two days.
Multiple E3 errors encountered during mash. Fixed by letting sit for 5 minutes, resetting bottom switch, and doing only 80% power. Wort started a milk color and was a transparent straw color by the time we boiled. Recirculation was used for the full duration of all temperature rests past the first 5 minutes.

No Cold Crash
WLP300 YEAST (Under pitch 3/4 pack @ 70F - Fermentation @ 72F)
Softish water profile for pale/malty
Triple Decoction using quart ladle
-----------------------------------------------------------------------
Plans for next brew day:
Use both floor-malted wheat and pils - these have higher proteins
Only do two decoctions instead of three to maximize flavor but minimize protein consumption by milliard reaction
Attempt to get as much body as possible by blowing through protein rest temperature quickly with a rapid heat combined with decoction addition

Notes: Recipe from Graham Wheeler's Brew Your Own British Real Ale book. Modified hops a bit based on availability - fuggles instead of challenger for first addition.
Also changed table sugar addition to grain and removed the flaked corn for simplicity. |

Notes: This recipe is based on Avery's, discontinued, Mephistopheles. However, Mephistopheles lies in wait, within his soulstone. For this beer contains the soul of Mephistopheles. Black as the soul of the demon lord. While this soulstone exists, Mephistopheles cannot be destroyed.

Recipe modified for my system and my process.
Add extract and simple sugar at 60 min mark on the boil.
Note: need to look up yeast nutrient additions for big beers. I have fermaid o in stock at home. May need to copy other big beer oxygenation schedules to get the yeast to eat enough sugar.
Aerate with pure O2 for 120 seconds at 1 L/min to target roughly 14 ppm dissolved O2.
Aerate again at 12 hours for 70 seconds at 1 L/min to target an additional 9 ppm. (recommended in Yeast book, page 84)
Target 40M cells per mL per yeast book's instructions on pitching high gravity beers. A 7 liter starter (constant stir) at 1.036 gravity with 100 B cells will result in approx 1107 B cells.
Start fermentation at 66°F ramp to 77°F @ 1.074 specific gravity. According to the Avery blog, it usually takes about 48 hours to reach 1.074
Age on bourbon soaked oak cubes until desired oakiness is reached. Drain bourbon before adding cubes to beer. It's extremely easy to overdo the bourbon flavor. You can always dose bourbon at the end if you want more bourbon flavor.
Consider adding vanilla, coffee, cocoa, coconut, or other great stout additions. I don't think peppers would work with the belgian yeast flavors.
If you aren’t able to get that much sugar out of the mash you may boil for longer and/or add a 50/50 mix of DME and Dextrose Corn Sugar to the boil to hit your OG target.

Notes: - Pre-boil all water adding a crushed Campden tablet.
- Test pH of water after pre-boil. It must be tested at room temp. Clean with the electrode with distilled water before and after each use. Once it's tested, .3 will need to be subtracted since it is at room temp. The goal is to have a pH 0f 5.25 - 5.35. In order to get there, add 1/8 tsp of gypsum per gallon and 1/4 tsp of calcium chloride per gallon.
- Single sparge mash.
- Wait until temp. is down to 150 before adding whirlpool. hops.

Notes: 60 minute hops are FWH.
Pitch at 16℃-17℃ and allow to rise to 20℃ over 6 - 12 hours. Maintain beer at 20℃ until FG achieved (or only 1-2 points away) and then allow beer temp to reduce.
Cool to drop yeast before transferring to keg with first dry hop. |
