Notes: 1) Add graham crackers (4 packs - 8oz) on top of mash, wet and lightly mix.
2) Add pecans (12 oz roasted then chopped) to mash after mash in on top of mash.
3) Add dark Karo Syrup @ 10 min.
4) Add brown sugar @10 min.
5) Add 6 oz Pure Maple Syrup to secondary after heating to 170 for 10 minutes then colling to 70f.
6) Add 2 vanilla beans to secondary.
7) Add 1 Table spoon Pecan extract to taste at bottling to 5 gal.
8) Add 1 Table spoon Vanilla Extract to taste at bottling) to 5 gal.
9) Add 3 oz pure Maple Syrup to taste at bottling after heating to 170 10 min then cooling.

Notes: Changed recipe to add a little sugar to see if this can help dry the saison out a but more.
I'm also going to go for a LARGE yeast pitch - Looking at a double pitch i.e. Lager size pitch.
I will also focus more on ramping up to 27/28cc. Changing .5c per day from day 4-5.
HOPS - Saw an article which used Lemondrop hops. I thought this would add a nice element to the saison spice. |

21/1/24 Pitched 2 (large) packs (no starter)
Slow start to fermentation. Fermenting strongly by 24/1. Ramped up temp from 19 to 22°C over the first few days.
Raised to 23°C as fermentation slowed.
Actively fermenting on 28/1/24
1/2/24 Still some bubbles in blow off but should be done (hopefully just off-gassing). Bottled 5 beers for comp. Tasting great - lightly spicy, with belgian fruity yeast character and pleasant low bitterness. Really well balanced. |
