Notes: This IPA style was pioneered in the North Eastern United States in New England. Known for its huge dry hop additions, extreme haziness, and fruit-forward aroma and taste, the hype train has made its way all the way around the world. The haze bros will accept nothing less!
Here is our 20 litre all-grain NEIPA recipe. Inspired by recipes from some of the best breweries in the States, it has near zero bitterness and a huge amount of citrus and stone fruit flavour and aroma. Our recipe comes in around 10 IBUs, while still using 100 grams of Citra and 100 grams Mosaic. It looks like orange juice, and, well, tastes pretty similar too. Rolled oats, rolled wheat and carapils add a pillowy mouthfeel, and the English ale yeast leaves a bit of sweetness to the finish. Coming in close to 7%, it is still crushable. Enjoy!

A collaboration with Omnipollo, known for their uncanny ability to repilcate dessert flavours in indulgent beers. This caramel and pecan flavoured imperial stout has been barrel aged for almost a year in whisky casks, to add an extra level of depth to the pecan mud pie concept. Don’t be too quick to rack the beer off the yeast once your final gravity is reached. The stressed yeast will be absorbing a number of undesirable fermentation by-products such as acetaldehyde and diacetyl. Give them a minimum of 10 days at fermentation temperature to do this before cooling it down.

| Notes: It's gonna be a tooth enamel remover for sure.The Hop smell was overwhelming but in a good way,the O.G. was 1.054 @70*F .The F.G. ended up being 1.012 @70*F,I carbed a 1pt sample to 2.4 volumes,pretty interesting brew,Malty,not overly sweet can't taste the alcohol,hop bitternes not as strong as I thought maybe due to the honey malt.beer is still green,what's it going to be like in a couple of weeks?don't know but for now it's pretty darn good.CHEERS.. |

Directions
Mash grains at 151-152° F (66-67° C) for an hour or until starch conversion is complete.
Mash out at 170° F (77° C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose,
and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort
to 67° F (19° C) and transfer to fermenter. Pitch two packages of yeast or a yeast starter
and aerate well. Ferment at 67° F (19° C) until fermentation activity subsides, then rack
to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then
add the second set. Age five more days then bottle or keg the beer.
Extract Substitution
Substitute 6.5 lb (3.0 kg) of light dry malt extract for two-row malt. Due to the large
hop bill for this recipe, a full wort boil is recommended. Steep grains in 1 gallon (3.8 L)
of water at 165° F (74° C) for 30 minutes, then remove and rinse grains with hot water.
Stir in dextrose and top up kettle to 8 gallons (30 L), and bring to a boil. Add hops as
indicated in the recipe. After a 90 minute boil, chill wort to 67° F (19° C) and transfer to
fermenter. Pitch two packages of yeast or a yeast starter and aerate well. Ferment at 67°
F (19° C) until fermentation activity subsides, then rack to secondary. Add first set of dry
