Notes: Trying a Kolsch Style w/ Kviek yeast to learn its characteristics.
Tastes similar to a Kolsch - less belgum-y and has a slight zang to it. Overall its a very drinkable beer. Fermented at 90 degrees. Fermentation started in 6 hours and completed within 36 hours - this yeast is nuts! |

| Notes: always get better eff with an overnight cold soak. Did add some Cinamon in with the Coriander, probably 10-12g's. Added Zest and SPice after shutting boil off and did a WP leaving it sit for an hour or so. |

Notes: Crystal was home roasted using Maris Otter.
First run with Corona mill. Efficiency into boiler ~77%, Did not boil down enough, so ended up with 11 gallons into fermentor.
Split yeast: 5.5 gallons in WL004 (Irish Ale) and 5.5 gallons in Wyeast #1056 (American Ale).
Irish Ale yeast much tastier/sweeter. #1056 seemed more bland. Renamed Mick's Amber Ale. |
