| Notes: I'd suggest a decoction mash, 20 min 128F, 60 min @ 148F and a 10 minute mashout @ 168F but if you're doing a single infusion try 60 min @ 148-150F. Ferment for as long as it takes, 10 days will probably do it for primary. |

Notes: 9 pakker Lallemand Diamond Lager rehydreres i 1L vann. Rehydrer i temperert vann på ca 22c. Dryss gjær i vann, la hvile i 15 min, rør lett rundt, la så hvile i 30-40 min (husk å dekke over skål med gladpack/sølvpapir) - sett.
Gjær kan pitches på 13c - Tilfør Brewers Clarex - sammen med gjær - for å få klar og fint pils.
Gjær ølen på 10c i 18 dager, deretter 15c i 3 dager.
Kjør ned til CC, la stå på 2c i 24-48 timer.

In regards to Daytime-esque recipe be sure to have a healthy dose of wheat malt and wheat adjuncts either flaked or torrified (we are fans of the latter) but keep your S.G. in to the 1.040-1.050 range and add in some oat adjunct to the grist bill, again flaked will do but we are fans of the golden naked oats or you could use some standard oat malt for extra mouthfeel and residual sweetness, so no colored malt and focus on wheat and oats will get you to a good beverage and from there you can play with the quantities to your desire, increase adjuncts if you are going more "hazy IPA" or use 100% fermentable sugars like cane or dextrose if you are looking for something more "session". |

Notes: Initial Procedure: RO water treated with 1/4 tsp Phosphoric Acid per 5 gallons. Ferment at 58 for four days. Then let rise to 68 to finish. Lager 1-2 months at 40 degrees.
Brewed first batch with a pitch temp of 58. It started very slow and did not take off until I went up to 61. Will pitch next batch at 60 and let rise to 62 and ferment at that temp for 3-4 days and begin ramping up to 68 to finish.
Future suggestion: Add a bit of Epsom Salt to get a fuller, more complex flavor. (tip from Colin Kaminsky)

1.8 Oz. Cascade Pellets (6.2%) for 60 minutes (any hops will do as long as they come up to about 50
IBUs)
2 packages Safale 05 dry yeast, hydrated
2 oz. cocoa nibs soaked in vodka for 2 weeks (I add just enough vodka to cover the nibs and I add the
liquid and the nibs in secondary)
Natural coconut and organic almond extract (purchased at the Savory Spice Shop; I get the 4 ounce
bottle of natural coconut, the 2 ounce bottle of organic almond)
· Steep dark malts, crystal malt and flaked grains in 1.5 gallons of water at between 150-160F for
1 hour
· When steeping is complete, strain liquid and add to 4.5 gallons of water
· Add all of the DME and heat to a boil.
· Once boiling, add the hops and boil for 60 minutes
· With 15 minutes remaining, add Whirlfloc or Irish moss
· With 5 minutes remaining, add the lactose
· Upon completion of the boil, cool and pitch rehydrate yeast
· Start soaking the cocoa nibs in vodka
· Ferment at room temperature for two weeks
· Transfer to secondary and add the cocoa nib/vodka mixture; let sit for one week
· After one week in secondary, siphon into a keg and add the coconut extract to taste; I add about
an ounce, taste, add a little more etc. You want a nice blend of chocolate and coconut. I go real
light on the almond extract as it needs to be a distant third in flavor behind the chocolate and
coconut but be slightly evident in the flavor
According to the brewing software that I use (Pro Mash) these are the numbers:
· OG = 1.069
· IBUs = 50.1
· My final gravity was 1.015
· 7.15% abv |
