Notes: Brew day was 8/3/2013. Ph was 5.3. Hit 153 and recirculated to get down to 151. I managed to pull 5.75 gallons exactly and everything went really smoothly. Fermentation started quickly, within about 6 hours, and pretty much stayed between 66-69F for the first few days. After that I let it drift up to about 72F. Took a gravity reading on 8/12 and it was 1.012 which is right on target. I dry hopped that day with 3oz of Mosaic. Cold crashed on 8/20/2013. I kegged this brew on 8/22/2013 and did the shake method to get up to a decent tasting level of carbonation. Beer turned out pretty well. It isn't all that bitter which is something that could potentially be kicked up a bit (maybe 5 or so IBU's) and it does have a slight dankness which is potentially from the Citra. Might alter those additions a bit. Overall a pretty tasty beer though. It is somewhat cloudy but that is hop residue.

O.G. 60

For 1 gallon (4.5lt):
2.25 lbs (1020g) Pale Malt
7 oz (200g) Brown Malt
2.5 oz (70g) Black Malt
1.0 oz (28g) Fuggles or
Goldings Hops

Mash grain for 3 hours at 150º F (66±1º C). Raise temperature to 170º F (77º C) for 30 minutes.

Sparge with hot water at 180 - 185º F (82 - 85º C) to O.G. or required volume.

Boil with hops for 90 minutes.

Cool and ferment with a good quality ale yeast.

Mature 4 months.

Strike with 10 gallons at 165 to hit 152. Verify Mash PH is 5.2. Adjust if necessary with lactic acid. Sparge with 12 gallons at 165-170

Pitch yeast at 60. Add 1vl for 2min of pure 02 prior to pitching. Ferment at 66. Raise to 70 degrees after a few days to clear diacytle.

Special roast is like a higher toasted victory. Use EKG for IBU if you have them over Perle.

Notes: in high gravity lagered beers, yeast population, strength, and alcohol tolerance is a important factor. add yeast nutrient to the first starter step, continue all 3 steps, or more if necessary to exceed the prescribed cell count. Add servomyces yeast nutrient 15 min. before flame out. This thickens cell walls and makes a more effective fermentation, usually exceeding expectations.

Notes: 1a) Get the sour mash pH down to 4.5, by adding phosphoric acid.
1b) Boil for 5 mins, chill to 100F, & add 11 capsules (20B cells each) of probiotics.
1c) Leave it aside for a day or so, till it reaches 3.1 pH.

2a) Boil for 25 mins.
2b) Pitch yeast & ferment as normal.

3a) Add the mango + pectinase, & secondary it for a few days, after fermentation is done.
3b) The mango should naturally carbonate the beer. If not, burst carb as usual.

4) Cold crash for a few days, before serving.

Notes: Very limited instructions from Malt Miller so chose 65 deg mash for 60 mins and swapped the yeast from SO-4 to SafAle-05.

MM says target OG should be 1050 but Brewers Friend says 1044 which is what I got. Target FG 1010.
