Tasting Notes: A slightly sweet take on a clean american wheat. Slightly like a Guava/Mango Quaffer
Decided to brew a wheat for spring and to play with mosaic, but it did not last that long.
Hard to describe, but tastes like a sweeter passion fruit/guava american hefeweizen that has been a hit with everyone that has tried it. Defiantly more of a hop forward beer (but not bitter hoppy), the wheat comes through but just hints at it.
Took it to a brew share a few weeks ago, the brew shop owners wife that doesn't drink malted beverages (cider lover) tried some and had me brew them a 5 gallon batch. So it has it's appeals!

Kegged and hit it with 10PSI for another week and started enjoying it. Gets better with time, but it's highly drinkable very quickly.

Notes: Shred pumpernickel bread into small 1" pieces, lightly toast in over on baking sheet to firm and crispy texture. Pre-soak pumpernickel with 1 gallon of 150 F water for an hour, strain and separate from "bread juice". Add pieces of pumpernickel to mash and mash as usual. Use bread juice in sparge water. |

Notes: This beer is designed to have a lot of dark fruit flavors like plum, fig, and raisin. Brown paper bags sometimes remind me of plums since we used to ripen plums in brown paper bags.
This was part of a group brew at Rob's house, this was my contribution. Came out a little stronger than anticipated, not sure how that happened. I made a 1.5 quart starter because trappistale yeast usually needs a little boost. I actually tasted the starter and it tasted pretty good itself. I should probably make a belgian pale ale with the same yeast at a future date.

sen stannade flödet i platechillern. tror det berodde på att jag öppnade och stängde kranen. ha ett konstant flöde nästa gång.

sätter på värmning på morgonen
fre kväll:
förde över till fermonstern. blev 20,5 liter.
torrhumlade plus en tsk florsocker på sön
FG:1009-1010 ca 6%. Nästan snabbare än voss, iom att det var helt klart 48h efter pitch.
flaskade tis, blev 19,5 liter på flaskor.
testade en lördag. hyffsad kolsyra. chillhaze och djäkligt lättdrucken. kveiksyran gör den mer frisk. mer tropiskhet i smak än arom. riktigt bra för 4 dages på flaska. perfekt bitterhet trots bara hopstand.
